Add whatever fresh vegetables that are in season at the time of preparation. Enjoy!<br><br>Family Recipe<br><br>This recipe is very healthy because it consists of all fresh vegetables. The dressing is very light and the entirety of the salad has no ingredients that cannot be easily identified.          <title>Cucumber, Tomato and Avocado Quinoa Salad</title>

         <description><![CDATA[<div>Ingredients:</div><ul><li>2 cups chopped English cucumber (seedless is best)</li><li>2 cups chopped tomatoes</li><li>2 large avocados, diced</li><li>1 cup sliced red onion</li><li>2 cups cooked quinoa</li><li>1/4 cup chopped cilantro (or herb(s) of choice)</li><li>Juice of 1 lemon</li><li>A drizzle of olive oil (I used about a tablespoon)</li><li>Salt + pepper to taste</li></ul><div>Instructions:</div><ol><li>In a large bowl combine the cucumber, tomato, avocados, onion, quinoa and cilantro. Toss to combine.</li><li>Squeeze lemon juice over salad, drizzle with olive and season with salt and pepper, and give it another toss.</li><li>Place in the fridge for at least 30 minutes to let the flavors marinate.          <title>Bruschetta</title>

         <description><![CDATA[<div>Ingredients:</div><div>- 6 Roma tomatoes<br>- 3 cloves of garlic<br>- 10 fresh basil leaves<br>- 3 tablespoons of balsamic vinegar<br>- 2 tablespoons of extra-virgin olive oil<br>- 2 ounces of fresh mozzarella<br>- 1 whole wheat baguette<br>- 2 tablespoons of olive oil<br><br></div><div>Instructions:<br>1. Wash the Roma tomatoes and cut them in half. Dice them into small pieces and place them in a bowl.&nbsp;<br>2. Mince the three cloves of garlic. Add half to the bowl with the tomatoes and save the rest for the bread.<br>3. Preheat the oven to 350°.<br>4. Chop and stir in the basil, balsamic vinegar, and oil. Mix it all up and add the diced mozzarella. Place the bowl into the refrigerator.<br>5. Slice the baguette into slices. Brush each piece with olive oil and sprinkle with a little garlic. Place on a cookie sheet and bake until the tops are slightly brown.<br>6. Remove from the oven and place each piece of bread on a platter.          <description><![CDATA[<div>Ingredients:<br>- papaya<br>- water<br>- optional sugar to balance flavor and ice (in other words, adds more flavor, but papaya already contains natural sugar)<br><br>. don't forget to have a blender, cups/containers, and wooden sticks (tongue depressors/popsicle sticks) !<br><br>Directions:<br>Peel the papaya and scoop out its seeds. Then chop up into pieces to put into blender to blend; as well, mix with small amount of water (in blender). Once thoroughly blended, pour a fair amount into your item of container; this will hold and create the shape of the popsicle when it freezes. Once poured, carefully place wooden sticks in the middle of each popsicle; this will be the handle of the popsicle and how it'll be held to be eaten. Finally, carefully place into freezer, depending on your fridge/conditions, let it freeze for a great amount of hours. You may check occasionally to see if it has correctly froze (slightly moving the stick can be a way to identify its state; if it easily moves through the papaya, it's still a liquid.
