         <title>Baked Jollef Rice</title>

         <description><![CDATA[<ul><li>3 cups of rice</li><li>tomato sauce 14oz</li><li>chicken broth 4 cups</li><li>1 onion chopped</li><li>3-4 tbls. of peanut oil</li><li>vegetables (about a pound), we like peas, fresh tomato &amp; carrots.</li><li>hot peppers (how spicy do you like?)</li><li>salt/garlic/thyme/<br>paprika<br><br></li></ul><div>RINCE YOUR RICE.<br>In a baking pan combine all ingredients and stir so that everything is mixed together. Cover tightly with aluminum, bake for 75 minutes at 350. <br><br></div><div><br></div>]]></description>

         <title>Rice pudding (arroz con leche)</title>

         <description><![CDATA[<ul><li>¾ Cup short white rice*</li><li>2 ½ Cups of water</li><li>1 small piece of a cinnamon stick see picture below</li><li>¾ cup whole milk**</li><li>½ cup of condensed milk</li><li>¼ cup of raisins </li><li>teaspoon vanilla <br>optional</li><li>Ground cinnamon for dusting</li></ul><div><br>Cook the rice with the water and cinnamon. When the rice is out of water, add the milks and stir. If you want to add raisins or vanilla do it , and then cover and keep it cooking on low-medium until it's thick.  Stir occasionally until its done. If it gets too thick add more warm milk.  You can eat warm or put in your fridge to eat cold. Dust with ground cinnamon. </div>]]></description>

         <description><![CDATA[<div><strong>New Year's Day Dinner must haves: </strong><em>Black-eyed peas, Collard greens and corn bread! </em></div><div>Black-eyed peas recipe:</div><div>Soak 1 lb dried black-eyed peas overnight.  Drain the water.  Add peas, one large onion, chopped, celery leaves, 1 bay leaf, a little Adobo seasoning, one smoked turkey wing or leg and enough water to cover in a dutch oven.  Heat to boiling, then cover and simmer for 45 minutes to an hour.  Season to taste with salt and pepper.  Serve with rice.</div><div><br></div>]]></description>

         <title>Mom&#39;s Soul Food Collard Greens and Corn Bread</title>

         <description><![CDATA[<div>The Bulluck Family includes Collard Greens in most family occasions.  They're so good, they'll make you want to 'slap yo momma!' --But Don't Do it! lol<br><br>Ingredients<br>1 tablespoon olive oil<br>1 small white onion finely diced<br>3 cloves garlic minced<br>3 cups chicken broth<br>1 teaspoon red pepper flakes<br>1 large smoked turkey leg fully cooked<br>32 oz. collard greens thoroughly washed and cut into strips.<br>salt &amp; pepper<br>hot sauce<br><br>Instructions<br>1. In a large deep skillet or pot, heat olive oil on medium heat.<br>2. Add in onions and cook until tender.<br>3. Stir in garlic and cook until fragrant.<br>4. Add chicken broth, red pepper flakes and smoked turkey.<br>5. Bring to a boil and reduce heat.<br>6. Cover and boil lightly for about 20-30 minutes.<br>7. Remove turkey leg and let cool.<br>8. Remove meat from bone and cut into bite-size pieces.<br>9. Return meat and skin back to the pot.<br>10. Simmer for 10 minutes.<br>11. Add collard greens to pot, pushing them down if needed.<br>12. When greens begin to wilt down, cover and simmer for up to 60 minutes.<br>13. Add salt and pepper if desired.<br>14. Plate the greens and pour on a few drops of hot sauce.<br>15.
