Origin of Lady Grey:

"Earl Grey and Lady Grey are both popular bergamot-flavored tea blends. The main difference between the two is that Lady Grey also contains lemon peel and orange peel. While Earl Grey tea has been enjoyed for hundreds of years, Lady Grey is actually a more recent invention, and is trademarked by the tea company Twinings. However, many tea companies offer similar blends combining black tea, bergamot, lemon peel, and orange peel for a flavorful, citrusy cup."

Origin of Low tea:

Low tea began from the high class of British society. The origin of low tea in England is attributed to Anna, the 7th Duchess of Bedford in the early 1800's.

Traditional afternoon tea, also known as “low tea,” refers to the setting in which it was served – on low tables, often resembling coffee or side tables.

1. Tea brewing and drinking etiquette:

Traditional British afternoon tea pays attention to the brewing method of tea, such as brewing tea in a ceramic teapot and avoiding the use of tea bags to maintain the best flavor.

When pouring tea, you should pour tea first and then add milk (Milk After Tea). This is the practice of British aristocrats, because early high-end porcelain cups are more heat-resistant and do not need milk to prevent breakage.

When drinking tea, you should not raise your little finger.

2."High Tea" and "Low Tea"

Low Tea: Afternoon tea for nobles is usually enjoyed on a low coffee table (Low Table), so it is called "Low Tea".

High Tea: The working class version, usually enjoyed in the evening with heartier hot foods such as meat, cheese and bread, hence the name "High Tea".

My favorite part of the tea time was when the teacher taught us how to handle a used tea bag. First, we lift the tea bag and wait for the tea to stop dripping. Then, we use a spoon to wrap the tea bag around it neatly. This method is both grace and practical. I was really surprised by this technique and thought the person who came up with it was very clever.

In this class, I learned a lot about etiquette. One thing that surprised me the most was the correct way to hold a teacup. Since I was young, I had watched many princess movies, and in those movies, princesses would always raise their pinky fingers while holding a teacup. This made me believe that it was the proper way to do it. However, in this class, I learned that when holding a teacup, you should only use your first three fingers, while the last two fingers should be tucked in and not lifted. Also, the left hand should not support the cup.

What impressed me most during the course was that when stirring the tea, the spoon could not touch the teacup to make a sound, and the tea had to be stirred back and forth, not clockwise. Also, the professor explained how to drink tea with the correct posture of holding the tea set. Because this posture made me feel strenuous, I tried harder and concentrated on holding the cup.
