First of all, you wash the Chilacuanes. You peel them very carefully. Then you remove the pulp as it is bitter and makes the dessert lose its natural sugar. Once the fruit is ready you cut them into long strips. Afterward you let the cut fruit rest in water for 15 minutes. You take the strips and you wash them to remove the bitterness that still have. You add the strips of the fruit, water and cinnamon or cloves to a pot. Then you cook them for 30 minutes. Once the fruit is soft you add the cup of sugar to the pot. Then cook for about 15 minutes more. After this cooking time, the dessert is ready. Serve and add a piece of cheese to contrast flavors. Finally, you could decorate as you want with cloves or cinnamon powder.
