         <description><![CDATA[<div>Protease is an enzyme that catalyzes proteolysis, the breaking down of proteins into smaller polypeptides or single amino acids. Protease does this by splitting up the peptide bonds within the protein by hydrolysis reaction (where the water breaks bonds). Protease is found in many industries, including food processing, waste treatment, drug manufacturing, and laundry and dishwashing detergents. Protease in detergent&nbsp; plays a key role of breaking down various stains during fabric washing. With the addition of protease into detergents, there were better optimization and purification properties of the detergent itself.&nbsp;Aside from washing detergents, protease is also used in food and baking industries for the production of breads, crackers, and other baked goods. Protease enzymes are used to reduce the mixing time, decrease the dough consistency and uniformity, and to regular gluten strength, and to overall improve texture and taste.<br>T.P</div>]]></description>

         <title>The Use of Amylase and Glucose Isomerase in the Manufacture of High Fructose Corn Syrup</title>

         <description><![CDATA[<div>High Fructose Corn Syrup is a sweetener used in many cereals, baked goods and soft drinks. In industry, High Fructose Corn Syrup is manufactured from Starch using 2 enzymes; amylase and Glucose Isomerase. In the first step, variations of Starch, amylose and amylopectin are broken down into alpha glucose with the aid of amylase. The variations of starch fit into the active site of the amylase enzyme, where their activation energies are lowered, resulting in a faster rate for the hydrolysis reaction where the glycosidic bonds on C 1-4 (Amylose) or C 1-6 (Amylopectin) are broken resulting in the formation of a-glucose. The resulting a-glucose is then turned into its structural isomer, Fructose, using Glucose Isomerase.&nbsp; P.S</div>]]></description>

This enzyme is used in many exfoliating skincare products for the purpose of breaking down the keratin protein that sits on the skin. Keratin tends to bind the dead skin cells together so proteolytic enzyme is used to cause a degradation reaction in order to break down the keratin. This allows the skin to better absorb their components since it is no longer clogged by dead skin cells as well as promoting cell growth and regeneration of new skin cells, for healthier looking skin. - A.R</div>]]></description>

They function as proteases, which break down protein molecules into their building blocks, such as amino acids and small peptides. Once protein molecules are broken down, they are more easily absorbed across the small intestine. This can be especially helpful for people with pancreatic insufficiency, a condition in which the pancreas cannot make enough digestive enzymes. For example, one study showed that participants with pancreatic insufficiency experienced better digestion after taking a digestive enzyme supplement containing bromelain, compared to taking the same digestive enzyme supplement without bromelain.
