65 years old
Has been making rice paper for 40 years, before she got married.

She makes rice paper because she likes it. She had to take over her business from her family.
She is a 3rd gen. rice paper maker.
She doesn't have a secret recipe, she just pays a lot of attention to the process and the ingredients.
She is very meticulous of every step of the process to control the quality of the final product.
She has her own rice paddy field, where she gets her source of rice to make her rice paper.
She has never had any problems with her paddy fields. The weather is always fine to harvest. If they run out of rice, they buy rice from markets in the countryside.She use fire wood under heat stove to start fire. Then she puts the rice paper on top of a surface which is above the heat source. Because she doesn't dry in the sun , she can control the quality. If she dries in the sun , the rice paper is exposed to insects and other factors that will affect the quality.

Problems:
1. Her job is hard work
- she wakes up at 0030am to begin making rice paper
-afternoon, prepare ingredients
(washing garlic, fish sauce, soak rice

2. 3rd gen rice paper maker.
- 3 children, 4 grandchildren.
- Her elderly daughter is supposed to be taking over her business, but she's not sure.
- Not a lot of people are still taking up the rice paper making business.

3. She doesn't usually hire people.
- she takes care of all the production with only her and her husband.
- the person that she used to hire  passed away.
- during festivals, she hires because she needs more people to help her.

4. She sells rice paper to her relatives, local people and people from other province.
- This kind of customers usually buy rice paper as gifts for their relatives abroad.

5. She doesn't like using machines.
- using machines is hot and cramped
- Making rice paper using machines will not improve quality
- making rice paper by hand is better because she can control the quality.
- She only has one machine that costs 10 million dong.

6. It's hard to control the temperature of the stove and the quality is dependant on the temperature.

Solutions: 
1. Reduce time taken
- She takes a lot of time to make rice paper. She's very tired.
- By improving the time taken on one of the processes, she can save her energy.

2. Temperature measurement thing.
- so she can control the temperature and get the perfect temp. for perfect quality.

Aim: Help boost tourism in the area and help the local enterprise 
Problem :many families are reluctant to sign up with the government and the younger generation do not want to take after the business. due to the low salary 

use social media as a advertising technique. 

Problem : traditional method will be wiped out as the society is shifting towards using modern technology . 
 How: 


Problem : Flavors of rice paper are limited.
How: Incorporate different flavors into the rice paper for instance chocolate flavor.

Prepare ingredients in the afternoon. 
- wash and soak the rice (soak an hour)
- soak the sesame 
- wash garlic 
- prepare fish sauce 

Step 2: 
At 12 in the morning, she burns the wood to make the glowing ember charcoal. 

Step 3: 
Milling the soaked rice, steam the liquid of rice powder 

Step 4: 
Spread the rice into a circle on a small pan

Step 5: 
Put the wet rice paper on the heated stove for the rice to dry. It takes 7-8 hours to dry. She works till 11am and have lunch, rests till 1pm. 

Step 6 :
