From 300 to 400 A.D. the people who live in what now is Cuba lived on the islands. Christopher Columbus made landfall in the new world in 1492, called “The Island of San Salvador.” He described them as the islands of the “bajamar” meaning shallow sea, from the surrounding sea. People know as “Eleuthera Adventures” arrived there in 1649. They were in search of religious freedom but instead found food shortage. IN the late 1600s to early 1700s pirates and privateers came to the Bahamas. The most famous pirate was Blackbeard and most famous privateer was Calico Jack. The females were Anne Bonny and Mary Read, disguised as men. The shallow waters and 700 islands made great hiding places for treasure. Rumors of the hidden treasure still exist on the islands today. One rumor has is that William Catt the pirate and Sir Henry Morgan a privateer buried treasure throughout the islands.

Seafood is a big type in the Bahamas. They fried, sautéed, and curried most of their seafood. Johnny cakes are very famous. They were made by early fishermen, a blend of flour, milk, butter, and spices. Another name for them would be “Journey cakes” for fishermen would cook them on their boats. Johnny cakes was a shortened version and stuck with the islanders. Many dishes included fruits and veggies. They cooked them into the dishes in many different ways. Mixing with salt pork, spices, tossing with hot sauce, and more. People would combine peas and rice, they called it “Peas n’ rice.” Fruits such as mangoes, papayas, guavas, passion fruit, and pineapples are very common in the Bahamas. They would make pudding and added the fruits into ice cream.
