I would place it in a prominent position where people will see it upon entering the food area, prior to having made a decision (therefore, more prominent than any other food options).

1. Salad is the first thing you see.
2. You can enter, pay and exit without even passing the hot lunch line.

I would have the salads bars to try and intercept the customer earlier rather than later so they choose salad before filling their plates with other items

I would place the salad bars in such a way that they are likely the first and last things people see. making it so people have to go around the first salad bar to get to other food items will make it prominent enough that people have to consider it and makes the idea of eating healthy more salient in their mind. even if they don't get any at the first bar, the idea of eating healthy is reinforced by the second one next to the register where people might impulse buy a healthy option.

Salad bar at the entrance so patrons have less space on their plate for unhealthy food and another salad bar near the cash register for last minute impulse purchases.

I would put the salad bar as the first thing you walk past. Before people are tempted by any other food - they see salad first when their plate it empty.

I would place the salad bar across from Ala Cart Items where people could see it first sight when entering the room. Also, placing the another salad bar in front of the Hot Lunch Line which people could recognize of healthy options before getting the main menu.
