Jesus comes as the New Passover Lamb, sacrificed to atone for our sins
The Lamb of God Passover foreshadowed of Jesus the Eucharist. By having the Passover in the Old Testament it foreshadowed Jesus being the Lamb of God (tittle), Jesus was sacrificed like the lamb in the Passover.

In the OT God appointed priest and anointed them to offer sacrifice is to help bridge the gap that was caused by sin (pontifex) 
He is the high Priest because he offers the PERFECT sacrifice 
One who lays their life down for God and others 
He continues this priestly role today, offering himself in the Eucharist
