Also the choices were a great way to dig in with all students so they can pick what they want to talk about

The writing should be catered to the intended audience, but clearly retain the voice and perceptions of the writer. I like the idea of allowing them to write with no fear of spelling, grammatical rules, etc in certain situations as a way to get all of their thoughts on paper. Students do a lot of reflecting in writing and notetaking in my room, but they're still not doing the kind of careful aesthetic work I need them to around their polished pieces.
