We only have two garbage ways right now: brine and nitrogen compounds. Both of them either change the taste and color of the meat or make it too soft. I'll keep working.

The water evaporates and the dried salt mixture bounds enough nitrogen compounds to keep the positive effects of both previous methods of meat preservation.
