My class tends to be just enough time because the process is one that can't be rushed and takes many hours. If my class needed to be fully online I would worry about the students not having the in-person attention they need from me and their classmates. Some students have natural hands on skills or have worked in other trades that gave them good hand-eye coordination. In Flipped Classrooms students view their lectures online and do their 'homework' or course work in class'. 
I often come in outside of class to help the students that are struggling. If I can add more of the extra content online so I have more time to help the students in class, sign me up. A typical day in my class starts with a quick outline of the day. Most days I write out the goals for the day on the board as well as what they will be learning. Next, I teach a 'How To..' lesson (demonstrating a step in the shoemaking process). Next, the students dive into that part of the process and I circle the studio to see who needs further instruction or one-on-one help. Students are also encouraged to help each other. Giving students ample amount of time is important in my class so they have one on one time with me.
