As part of the Erasmus+ KA210 VET project "Mediterranean Diet for Overall Health" (2023-2-EL01-KA210-VET-000183592), we are organizing the activity "Environmental Dimensions of Food Production and Processing", taking place in Acharnes from March 10–13, 2025. On March 10, we will visit the International Food Expo 2025 in Athens, where participants will explore booths and exhibits showcasing essential Mediterranean ingredients such as feta, graviera, honey, olives, olive oil, aromatic herbs, and grains. Students will engage in an interactive Treasure Hunt Game, where they will: -Solve enigma-style clue cards leading them to the correct exhibition areas and key ingredients. -Take on challenges and answer questions about the production, technology, and sustainability of these foods. -Conduct sensory evaluations, testing the quality of core components based on organoleptic characteristics (taste, texture, aroma, etc.). Their findings, along with photos demonstrating teamwork and achievements, will be shared on a common Padlet to document their experience and learning journey. This immersive activity will not only deepen students’ understanding of Mediterranean food science but also enhance their critical thinking and collaboration skills in a fun, hands-on way!

This activity is based on a webquest with the aims to help students a) explore Traditional and Modern Farming Practices, b) assess Agricultural Environmental Impact by analyzing carbon, water and land footprints and compare these impacts across countries, c) discover how agriculture supports and influences the Sustainable Development Goals (SDGs) for a better future. Students from Greece, Slovakia and Turkey, participants of the Erasmus+/eTwinnig Project "Mediterranean Diet for Overall health" durring a mobility that took place in Acharnes/ Greece (10-13/03/2025) viewed the presentation ‘Traditional and Modern Farming Practices’ in Genial.ly and completed the accompanying quiz, Read the story of a Polish farmer operator of a wheat farm who uses traditional farming methods and explored possible improvements, worked in 3 international groups to assess the ecological footprint commparing their countries using the Global Footprint Network and commented on a padlet thinking critically. At last they made a mindmap in Coggle to relate Agriculture's Impact on the Sustainable Development Goals (SDG's) and presented it.

This activity is based on a webquest with the aim to help students differentiate between short-term weather patterns and long-term climate trends, investigate local climate characteristics and ponder how these align with global Climate Change phenomena. National teams with students from Greece, Slovakia and Turkey, participants of the Erasmus+/eTwinnig Project "Mediterranean Diet for Overall health" after watching a short video comparing weather with climate, explored in national teams the current weather conditions of their area through a real-time satellite imagery website with weather maps. After that, working individually they interviewed an older family member about how they remember the climate in the same location when they were young, and discussed any observed changes over time in terms of temperature, precipitation, seasonal patterns or extreme weather events. They made a post on a linoit to comment. An introduction to the concept of climate change followed with a video from NASA and they visited the interractive web application Fitz Lab to discover what type of climate is projected for their city in 2080. At last they reflected on the question ‘Do the long-term trends in climate change align or contrast with what you have observed about the climate in your local area?’ in a Tricider discussion. As part of our activities held during the celebration of the World Water Day and Earth Hour students created and presented in the public: -a simple model to better understand the effects of glacial melt on water levels, simulating how melting glaciers contribute to sea level rise, -an experiment using vinegar and seashells to observe the reaction and simulate ocean acidification so to better understand the chemical reaction that occurs when carbon dioxide dissolves in ocean water, leading to ocean acidification, -the results of their research task regarding the reasons behind the accelerated melting of polar ice and glaciers and the global consequences of this phenomenon, -the results of their research regarding the causes and effects of increasing frequency and intensity of heatwaves and how these impact human health and ecosystems, -a small-scale erosion experiment using soil, water, and different types of ground cover to observe and record the rate of erosion, and the results of their research regarding the factors leading to soil degradation and desertification, and the socioeconomic impacts of these processes, followed by a discussion on how does soil degradation affect food security and biodiversity and what sustainable practices can help combat desertification. This activity is based on a WebQuest aiming to a better understanding on how climate change is linked to human health so to raise awareness on the need of proactive solutions to protect public health in the face of climate change. Students from Greece, Slovakia and Turkey were asked to form 5 teams and verify the information given in the form of an essay regarding "Climate Change and Human Health" by comparing the results with relevant valid articles and sources. Each team was dedicated to a subtopic, as follows: TEAM 1: Air Quality Deterioration and Its Psychological and Social Impacts TEAM 2: Spread of Vector-Borne Diseases TEAM 3: Food Security and Nutrition TEAM 4: Biodiversity Loss TEAM 5: Urbanization and Health They worked collaborativelly to verify the information provided for 3 key questions/subtopic, by comparing the results with relevant valid articles and sources. They were also asked to identify similarities and differences, inaccuracies, etc. and then to post their findings to a padlet. Then they made use of these technologies so to give response to the question: "What strategies can be implemented to address the growing incidence of climate-related health issues?", verifying again their results with valid sources, so to to understand the advantages and limitations of these technologies. A culinary workshop organized in our school, regarding colored eggs. This is an activity part of our yearly activities but also will be used as part of our Erasmus+ / eTwinning project "Mediterranean Diet for Overall Health" for the Earth Day celebration. On this workshop, theory and practise, exploring the role of eggs in the Mediterranean diet, and cultural significance as well as the science of egg composition, and natural vs artificial coloring of eggs—integrating biology, chemistry, nutrition, environmental and cultural aspects. In the practical part, students were asked to test and observe pH effects on eggshell, dye eggs using foods such as red cabbage, beetroot, onions, carrots, and curcuma as well as with artificial colors and test for colorfastness and aesthetics.

Students from Greece participating to the Erasmus+/eTwinning project "Mediterranean Diet for Overall Health", besides the activity described in the Twinspace of the project in ESEP platform, took part in a workshop centered on food waste valorization as part of Global Recycling Day 2025, which had as its international theme for 2025: "Breaking Barriers: A Revolutionary Blueprint for the Waste Management Crisis." The activity examined how science and innovation can turn discarded food by-products into useful resources. Students in this workshop learned how to turn common kitchen trash into a bio-based solution with practical food technology applications by using fruit peels and vegetable trimmings to make natural preservatives, chips, soup stocks and pectin. By highlighting the need of education, creativity, and sustainability in addressing trash issues, the activity linked local environmental consciousness with global bioeconomic concepts.
