It took a good 7 minutes to find out that it was on the second floor and in front of the parking lot. When we found it, I was a little surprised to find out that it was small, yet had a lot of people waiting. We took counter seats and I noticed that the interior was decorated in a vintage fashion. The decor, music and the posters appear 1950s to me.

Ramen, a bowl of noodles in a soup with condiments; is a Japanese dish of Chinese origins. It first came from China as lamian noodles, which then spread to Japan where it was adapted to suit Japanese taste and became distinctively Japanese. Tsukemen, is basically ramen but the soup is served in a separate bowl at that time. To eat it, one should dip the noodles in the soup and then eat it. Regular ramen has to be eaten once served so the hot broth does not cool or soften the noodles and ruin the mouthfeel. I prefer my noodles to be a bit chewy, and to me, regular ramen is a little too hot for me to eat before the noodles soften, which is why I prefer tsukemen.

Ramen is a fast food in Japan, costing at least ¥400 (USD $4.00-$5.00) but it is at least $15 a bowl in the US. At its most basic, ramen is the Japanese name for a noodle soup, featuring vegetables, meat, and sometimes fish in a broth that is dense with noodles. It is a meal in a bowl, and it has long been popular, inexpensive street food. But beyond the basic bones of this definition, variations are myriad. Just about every region or city in Japan has their own style of ramen. There are three main broth options: shio (salt), miso, and Shyoyu (soy sauce), but these are really just ways to perk up a basic broth made of boiling pork bones. Here you can eat Japanese authentic ramen. The noodles were perfect, broth delicious and the pork rice is good. Yummy chewy noodles and tender meat cheap price, and fast service. The wait was worth. You also can make requested of the noodles more soft or chewy. Their service is really nuanced. so many people enjoy the food here. The maneki-neko,you may be more familiar with it as a "lucky cat." These Japanese figurines are often found in restaurants and shops, this is a popular and some traditional color for lucky cats, beckoning general good luck, wealth, prosperity.Right paw raised invites money and good fortune.

Fish fermented in rice initially was meant for extension of shelf life. An interesting thing to note is the rice used to ferment the fish was not eaten. It was not until Matsumoto Yoshiichi of Edo started seasoning rice with rice wine vinegar which allowed immediate consumption of the fish. This is the first appearance of sushi. Then Hanaya Yohei took the concept further and placed a fresh fish on top of the rice. This became the first finger sushi or nigiri（にぎり）。Japanese Traditional sushi was then influenced by western culture to fusion rolls such as California rolls and calamari tempura roll, etc.
A well-known tale of the origin of sushi:
Back in the ancient times, Japanese wives hid their pots of rice with osprey (a type of bird) nests to prevent thieves from stealing them. Over time they would collect the pots. One Japanese wive noticed the rice begun to ferment and the fish scraps from the osprey had mixed into the pot. The mixture turned out tasty and thus starting a new way of extending the shelf life of seafood.

I went to Mitsuru because I had never tried takoyaki and I had not seen them sold anywhere else. I learned later that Mitsuru is famous for its snacks like takoyaki and I learned why. The takoyaki is a result of French's introduction of batter to Japan beginning since the 1600s. Batter composed of water and flour became important to Japan after the Tokyo earthquake of 1923 as a staple food. In 1935 as a result of its importance in Japan's culture, Endo Tomekichi of a part of Osaka where octopus is plentiful decided to use octopus in batter. Although the takoyaki is traditionally served with a glaze, the takoyaki at Mitsuru is topped with a green, sesame sauce which may be a house recipe. The takoyaki is a distinct food of Japanese culture as known by those outside of Japan or at least for me. When I first saw them, I though it was kebabs, but having tasted them it is distinct and there is no Mexican dish I know of that is similar. However, it is treated the same as any street food like esquites or hot dogs unless served in a restaurant .

However when I went with my friends, it took them a bit of time to find parking as well as the actual restaurant itself. With Daikokuya being a ramen restaurant, I was expecting for the restaurant itself to be small, but it was much smaller than I could have anticipated. The tables were very close together as well as the bar facing the cook. There was very little room for others to walk around the restaurant itself, making it a feat in of itself to even work there.

Ramen first originated in China with the name lamian noodles. However once it was brought over to Japan the dish started to acquire more and more Japanese culinary qualities, most of them being the taste of how noodles were cooked in Japan. Ramen is considered a fast food, with ramen stands littering the streets at night and are generally open very late. Ramen is also very inexpensive, with bowls ranging from five to four dollars. However in America and other countries, the range of price goes up quite a bit, with the cheapest ramen I've found being seven dollars, all the way up to a standard bowl being almost twenty dollars.
