Vegetable oils are polyunsaturated fats that have many c=c double bonds, these fats are liquids at room temperature. When these fats are hydrogenated this causes fat to harden at a higher melting point with being solid at room temperature. Some of the double bonds that is partial hydrogenation is softer and easier to spread margarine is less hydrogenate and harden margarine is more hydrogenate. Margarine is made up of emulsion which harden the oil and the degree of hydrogenation can vary to get the oil softer or harder oil.
