The main points I see repeated within the given definitions of society are: government, class division, surplus food, education, writing, and the creation of laws governing the people and their conduct. Once these have been meet you then can classify something as a civilization.

As all the definitions include, urbanization is on of the key aspects in defining civilization. A government must also be present according to all except Gandhi. Gandhi only speaks of urbanization and the specialization of profession agriculture caused. There is more to a civilization than that. Agriculture introduced a change that was destined to be included in civilization which is social structure. The dictionary.com definition does not include this. As stated earlier, specialization did occur with the introduction of agriculture. Definition 3 says what caused it was the newly developing surplus while definition 2 acknowledges what came from it such as science. The second definition has more elements required than definition three. Writing is mentioned in most definitions and it is a large part of civilization. It allowed for trade, record keeping, etc. The last essential element is only given in the first and last definitions. These intellectual activities now define much of humans. Religion is not required. It was only listed once.
