The light fluctuates like that because as the sun rises there is more light, and as the sun goes down there is less light.

The carbon dioxide slopes off like that because at first it is present in the air as a gas, but then it's taken out of the air by the plant, and eventually composted into the soil and taken into the plant again. 

The oxygen starts at a baseline level when the garden is sealed, and then increases with each day.
