These quotes represent the fact that prior to the columbian exchange, everything was isolated and none of the food, animals, and people and diseases had ever came in contact with one another which adds to the significance of the Columbian Exchange because it changed the world and made things interact and change.

North America was deeply affected by the disease brought upon by the Europeans and that caused a huge population plummet in the Americas because they weren't used to diseases such as measles, yellow fever and small pox and they also had no way of treating it in turn, disease almost wiped out the entire native population of the New World. 

Europe: The biggest contributions brought from the New World to the Old World were crops such as Maize, Potatoes, and other high carb crops.
