In Europe we know many popular foods from the U.S.A, such as hotdogs, hamburgers, icecream and apple pies.

All of these popular foods originated in foreign coutnries. Colonist, settlers en immigrants who moved to America took those recipes and their ingredients with them. The origin of the ingriedients are very important in this story, most of them came from Europa and therefore most of the foods also originated in Europe.

Most of the American dishes can be separted in the following 5 categories.

1. Native foods
There are several varieties of vegetables, nuts, mammals and fish that are native to America, most notably beans, corn and squas. Some of these foods also had "Old World" varieties (strawberries). Indigenous recipes included succotash, corncakes, and baked squash.

2. Hybrid dishes
Old world recipes adapted to include new world ingredients, for example cornbread which is a new variety on the native American corn.

3. Ethnic blends
When diverse cultures/cuisines settle together in a region, different mixed type of foods came to exist for example Chop Suey.

4. Regional specialties
Specialities which originated at a certain place within the US. Such as Gumbo in the New Orleans Region.

5. Manufactured goods
Entrepreneurs who developed their recipe into a world known brand, such as Coca Cola, Mc donalds and more.

Corn cake is for example something which originated within the United States. Corn is a popular and common crop in America and therefore had been used in many different meals. Corn cake was something that originated from the native Americans, since they also had acces to all these kind of vegatables they experienced with it to get better tasting results.

Want to make corncake yourself? Follow the following steps:

Step 1: combine the pulse corn and green onions in a blender, mix it until chopped (but not to smooth).
Step 2: put the corn onion mix in a large bowl and add 2 table spoins with oil and 3 egg yolks.
Step 3: Add flour, cornmeal, salt and pepper through the mixture.
Step 4: In a clean bowl, whisk egg whites until soft peaks form.
Step 5: fold the egg whites into the mixture.

Step 6: Place the fying pan over an medium-high heat source and add some oil.
Step 7: drop large drops of the mixture into the pan and wait until all edges are browned.

Corn cake was preserved as a popular dish thanks to the Mexicans. Eventually the Corn Cake came back to the USA because the diffusion of Mexican-inspired food into all corners of the country; and the influence of counterculture movements in the 1960s and ‘70s, resulting in back-to-the-land ideas about growing your own food and sharing it communally.
</sub>

Gumbo is a stew of which the recipe originated in the American state of Louisiana in the 18th century. It consists of meat or fish, okra, roux, sassafras herbs and the Cajun holy trinity (a mixture of peppers, celery and onion).

Noone really knows where Gumbo comes from, but to examine a gumbo, you must also research Cajun and Creole cuisine. These two of traditional styles Louisiana cooking came from a few European groups who moved into the state. French colonist brought Cajun cuisinewith them after they settled in the Arcadia region of Canada, but afterwards they were forced out by British. Many of them fled and moved to the swampy region of Louisiana around 1760, creating their own cultureat this new spot!

Gumbo's can generally be divided into three categories. Thickened with okra, thickened with filé powder and the gumbo's only thickened with a roux. Modern recipes add a roux to the okra and filé gumbo's for extra thickening and flavor. Okra and filé powder are not used together historically. Sometimes a more modern version is made with a light roux, sautéed okra and finished with filé after cooking for a sweet taste. It is said that when using both the gumbo is too thick and that the flavors neutralize each other.
