Interaction Design is a very broad field that uses different elements such as visual, sounds and other senses to build up a design that is suited to the consumer's surroundings, lifestyles and behaviour when using the product. The main aim of Interaction Design is developing a relationship between the consumer when they are using the application rather than adding the numbers of features on the application that the user might not even use.
There are a lot of processes in Interaction Design, which involves understanding and collecting data of the consumer, knowing the problem, strategies, and create a prototype, design to the information collected.
All these steps are delegated to different roles such as information architecture, product design, and visual design. Thus, in conclusion, those roles mentioned above come under the big tree of Interaction design, and that's the difference.

Refrence:
https://www.interaction-design.org/literature/article/what-is-interaction-design

Interaction Design process includes :
1.definition,
2.research,
3.ideation,
4. design,
5.prototyping,
6.observations.
Firstly, the designer will define the goals he would like to achieve from the design. Secondly, research and identify the needs of the consumer and their requirement. By identifying their needs, the designer will have an idea of the words, visual representation, space and technology he needs to design to suit the user's behaviour. Thirdly the designer really has to go in-depth and be specific to understand the pattern of their consumer, from what kind of features are familiar to them to the way the programme carry out their task.
Then, Visualise and come out with models with features that will likely to help or solve their problems and build the prototype. lastly, evaluate what is being built during the process.

Reference : https://www.lynda.com/Dreamweaver-tutorials/Understanding-interaction-designprocess/82822/97971-4.html
http://www.sharritt.com/CISHCIExam/interactionDesign.html
