         <description><![CDATA[<p><br></p><ol><li><p><strong>Heat the water</strong> to 195–205°F. The water should be hot but not boiling.</p></li><li><p><strong>Rinse the tea leaves</strong> by pouring hot water over them for a few seconds in the Gaiwan, then pour it out. This cleans the leaves and makes the tea taste better.</p></li><li><p><strong>Add fresh hot water</strong> to the Gaiwan and steep for <strong>10–15 seconds</strong>.</p></li><li><p><strong>Place the Filter on top of the Fairness Cup</strong></p></li><li><p><strong>Pour the tea</strong> into the <strong>Fairness Cup</strong> by placing your finger on the Gaiwan lid while you pour.</p></li><li><p><strong>Steep again</strong> many times, adding a few seconds each time. Oolong tea can be steeped <strong>5–10 times</strong>!</p></li></ol>]]></description>
