         <description><![CDATA[<div>The food in Italy is such a big reason why many people make the trip in the first place, Here are some food recommendations that everyone has to try when in Italy! <br>1. Risotto<br> Though risotto is most popular in the north of Italy, many restaurants in Rome offer at least one dish of it. To make risotto you start with a short-grain, thick rice, like carnaroli or arborio, then stir it with butter and a seasonal vegetable or seafood, gradually adding broth. Risotto con crema di scampi with cream and shrimps is a common and delicious choice in Rome. Even the recipe makes you drool, right?<br><br>2. Cheese Fonduta<br>Cheese fonduta, a melted cheese dip made of milk, eggs and white truffles (tartufi bianchi). Fine cheeses include robiola, sheep cheese (tuma, in dialect) and tumin, a white mountain cheese soaked in red pepper and olive oil sauce. This is highly recommended for all cheese lover out there!<br>3. Pasta &amp; Pizza <br>You should not miss out on feasting on pasta and pizza, the two iconic traditional Italian dishes during their vacation.<br><br>Pasta types vary significantly depending where you go in Italy. Be sure to try the regional specialties in the cities that you are visiting. If you are exploring beautiful Rome, order a serving of the pasta alla carbonara, prepared with ingredients such as eggs, Pecorino cheese, guanciale (a type of Italian cured meat made from pork cheeks) and black pepper.</div>]]></description>
