How to make up school work if missing school days?

https://bsd405.org/wp-content/pdf/policy/3122P.pdf
The Bellevue School District believes that regular school attendance and engagement is essential to student success. Students are expected to attend all assigned classes each day.
Kindergarten curriculum is spiral mode, meaning we learn something this week and later in the school year, we will come back to the same topic for refreshing and add more content. So missing a day or two shouldn't affect your child's overall learning.
If they miss important content for days/weeks, we change differentiation strategies for them, such as putting them in different small groups, or using different activities to help them catch up. School also has data analysis meetings for kids who might need extra support and that's when we figure out better ways to help kids if missing school for significant time.

School Lunch: Can families have some help with kids to adopt to the buffet style?

Families who prefer kids to have school lunch, please see the daily menu here: https://bsd405.org/services/nutrition-services/lunch/
Not quite sure how to help kids choose school food since I cannot track who likes to eat what. Usually at school lunch time, all kids who take school lunch would line up to type their account number, then move on to get a tray and a fork. Kids are free to choose milk/chocolate milk, any vege/fruits from salad bar, then move on to entree.
We have lunch helpers on both side of the lunch line so if kids need help, all they need to do is to raise a hand to request help.

Lunch is only 20min and it is shortly after snack. Any flexibility in timing?

In K102, we have our daily snack between 9:45-10:00AM before specialists classes(Art and Music at 9:50, English at 9:45 and Library finishes at 9:45), and lunch at 11:25AM.
Personally, I think 10:00 to 11:25 is more than an hour which is not that short.
But if your child thinks they are hungry before 9:45AM or not hungry for snack in the morning at all, please remind them to eat or not to eat during snack time and I will have them have snack when they tell me they need it right outside our classroom. So far, no child requested an early or late snack yet.

Anything related to foster creativity in the curriculum? eg. making things/projects.

I mentioned in our first two newsletters that we are exploring math tools such as connecting cubes and pattern blocks. These are things we will use quite often in the future math classes and students can create their own products and describe them.
During presentation, I also introduced three big projects in science where students learn to be engineers, such as making windsocks, and designing own ramps.

How to create challenges for kids who already have the basics?

It depends on the subjects.
Chinese literacy: some may understand Chinese instructions but not many kids in kinder know how to read/recognize Chinese characters yet. To challenge a child who can listen and speak Chinese, learning to recognize Chinese characters/target vocabulary is a challenge.
English Literacy: Like I said in the presentation, kids will be divided into different groups for reading and writing, so learning material levels are different. If families want to challenge your child at home, learn to read a book of their choice by themselves and ask comprehension questions like what is the book about, or what happened in the story, or how do you know...
Math: to challenge your child on math, reasoning is a big part. If they already know basic operations, ask them to explain how they reason using because. I will use different materials in class for intervention and extension as well but families can choose to use any materials you find at home.

Will families get update on finding a sub teacher when Ms.Yin is away? And transition to the sub teacher?

I usually announce my days off in newsletter and who the sub would be on which day if it's a short time away.
When I take maternity leave, a sub teacher will be assigned for our class. Ms. Tan, our principal has a few long term sub candidates that she is observing. They are all Chinese-speaking teachers who have been subbing in Jing Mei in the past years. Once she decides on who, she will let me know and I will invite the sub teacher to our class and join in our daily learning before I'm taking maternity leave, so the sub teacher can get familiar with the kids and build relationships with our class community until I come back in Spring ideally and hopefully.
