         <description><![CDATA[<div>1 cup butter<br>1 cups light brown sugar<br>1 cup chocolate chips<br>1 cup chopped pecans or walnuts<br><br>Heat butter and sugar in a thick bottom sauce pan stirring nearly constantly until it reaches a hard crack (150 degrees on a candy thermometer). Pour out on wax paper on a flat surface (I use an upside down cookie sheet with wax paper over it). Quickly spread with wooden spoon.  Sprinkle chocolate chips over hot candy surface, wait ~1-3 minutes and spread chocolate with butter knife.  Sprinkle nuts on top using palm to press nuts into melted chocolate.  Let cool for a couple of hours and break.</div>]]></description>

         <description><![CDATA[<div>(We don't usually include the steak anymore but added here as part of classic Pho Tai)<br>-Eye of Round Beef steak, 1/2 pound<br>-Canola oil, 2 tablespoons<br>-Asian fish sauce, 3.5 teaspoons<br>-Salt<br>-Fresh ginger, 2 inch piece<br>-Onion, 1 medium or large<br>-Beef broth, 6 cups<br>-Pho spice mix: can make own or find at Jungle Jim's or https://www.patspantryastoria.com<br>-Rice vermicelli, 8-10 oz.<br>Bean sprouts, 1/4 lb.<br>-Fresh basil, mint, cilantro, jalapeños<br>-2 limes<br>-Sriracha sauce<br>1. Slice beef against grain into 1/8 inch slices and place in resealable plastic bag with 1 tablespoon of oil, 1.5 teaspoons of fish sauce, and 1/4 teaspoon of salt. Seal bag and massage with your hands to distribute marinade. Place in fridge for one hour or overnight.<br>2. Slice onion into quarters and ginger root in half lengthwise. Warm dry frying pain to medium heat. Place onion and ginger in pan until blackened on each side (about 15 minutes).<br>3. In a large saucepan over medium-high heat, combine beef broth, blackened onions and ginger, pho spice mix, and remaining 2 teaspoons of fish sauce and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes or longer.<br>4. As you near mealtime, bring a large pot of water to boil, add the rice vermicelli, and cook according to package directions. Drain, rinse under cold water, and divide evenly in bowls.<br>5. In a large frying pain over high heat, warm the remaining tablespoon of oil. When hot, add beef and cook stirring often until seared on both sides, about 4 minutes in total. Remove from pan and set aside.<br>6. Strain the broth through a fine mesh sieve, return to saucepan, and bring again to a boil over medium to high-heat. Add half of bean sprouts, basil, and beef, and cook until bean sprouts begin to wilt, about 3 minutes. Ladle over vermicelli and serve.<br>7. At table have plate of quartered lime wedges, additional fresh basil, mint, cilantro, bean sprouts, and sliced jalapeños. Add to soup per preference and top with Sriracha.</div>]]></description>

         <description><![CDATA[<div>2 c plus 2 Tbsp flour<br>1/2 tsp baking soda<br>1/2 tsp salt<br>12 Tbsp (1 1/2 sticks) butter, melted and cooled until warm<br>1 cup light or dark brown sugar packed<br>1/2 cup granulated sugar<br>1 large egg plus 1 egg yolk<br>2 tsp vanilla extract<br>1 1/2 c semisweet choc chips<br><br>Line cookies sheets with parchment paper. Whisk flour, baking soda &amp; salt in bowl. Mix butter &amp; sugars. Beat in egg, yolk &amp; vanilla. Add dry ingredients &amp; beat at low speed. Stir in chips.<br><br>The recipe allows for big spoonfuls for big cookies when placing on cookie sheet.<br><br>Place in preheated oven at 325 degrees. Rotate tray (from top to bottom and front to back) at 6 min; bake for total of about 12 min. They should look under-baked! </div>]]></description>

Buy frozen butternut squash (I don’t know how to skin/cut fresh butternut squash, so this is my answer to that dilemma).<br>2.  Do not, I repeat do NOT, dump a can of chipotle peppers into the crockpot. &lt;&lt;insert fire emoji here&gt;&gt; My SIL, who is married to a Mexican and thus serves as my expert in all things spice, informed me that I should just put one in for 20-30 minutes and then remove it.  After our family spontaneously combusted on first attempt of this recipe, we repeate with this and it provided the right amount of spice for my VERY WHITE (read spice intolerant) family.<br>3.  Would probably be good with a meat or meat alternative other than ground turkey for veggies and those who pardon turkeys. <br><br><br></div>]]></description>

         <description><![CDATA[<div>Absurdly easy, and so delicious for a winter meal. </div><ul><li><strong>4</strong> cups chicken stock</li><li><strong>2</strong> medium russet potato, peeled and cut into large dice</li><li><strong>1</strong> medium onion, cut into large dice</li><li><strong>2</strong> medium carrot, cut into large dice</li><li><strong>½</strong> cup gochujang (Korean chili paste)</li><li><strong>½</strong> cup honey powder or sugar or honey</li><li><strong>4</strong> tablespoons light soy sauce</li><li><strong>1</strong> green Korean chile (or Anaheim chile), sliced and seeds removed</li><li><strong>3</strong> cloves garlic, minced</li><li><strong>2</strong> lb. chicken thighs, skin-on, bone-in</li><li><strong>2</strong> ounces enoki mushrooms, or any other small mushroom</li><li><strong>1</strong> bunch scallion, cut into 2 inch batons</li><li><strong>1</strong> tablespoon sesame seeds</li></ul><div><br>Combine everything except the last three in a dutch oven and bring to a boil. Cover and drop heat to simmer for 20 minutes. I fish the chicken thighs out at the end, and debone them, returning shredded chicken to the pot. Garnish with enoki, scallions, sesame seeds. Can add meat if you so desire, but make sure you marinate the meat in the tandoori seasoning (I don't know from personal experience, but my understanding does add to the taste)<br>3. Add the garlic thecha chutney with the veggies as well, adds a ton of flavor <br>4. Any of the items can be found at an Indian store - Patel Brothers has everything, my personal favorite Indian store is India Bazaar. </div>]]></description>

         <description><![CDATA[<div>I think you can call this a healthy dessert because there’s fruit in it... <br>* 4 c blackberries</div><div>* Zest of one lemon + 1 Tbsp lemon juice</div><div>* 1 c flour</div><div>* 1/2 c unsalted butter, cut into small cubes</div><div>* 1/2 c brown sugar</div><div>* 1/3 c oats </div><div>* 2 tsp cinnamon  </div><div>* 1/2 tsp cloves</div><div>* 1/2 tsp salt</div><div>* 2 tsp vanilla extract</div><div>Preheat oven to 375 F. Mix blackberries, lemon zest, and lemon juice together and place on the bottom of a 9 x 9 pan. Combine flour, butter, brown sugar, oats, cinnamon, cloves, and salt. Use your hands to knead the butter into the mixture to make a crumble consistency. Add the vanilla and continue to knead. Top the blackberries with the crumble and bake x 30 min.</div>]]></description>

         <description><![CDATA[<div>I don't know where I found the original recipe anymore, but it popped up when I searched for "Chipotle's guacamole recipe". :)<br><br>2 hass avocados<br>1 lime, juiced<br>1/4 of a large sweet red onion, finely chopped<br>2 heaping Tbsp of fresh cilantro, chopped<br>salt to taste<br><br>Cut avocado in half, remove seed<br>Cut into cubes and scoop out with a spoon<br>Mash together with the backside of a fork until smooth-ish<br>Add lime juice, red onion, cilantro, and salt and mix well.  <br>Do a "taste test" with a tortilla chip and add more salt or lime juice if needed (sometimes you need to do this several times . . .)<br><br>Optional variations/additions:<br>1 tomato diced<br>chili powder<br>jalapeno peppers diced<br>Really you can add in anything you want (I've even tried bacon and sauteed red peppers)</div>]]></description>
