         <description><![CDATA[<p>It's because their cells aren't getting the fuel they need, when Jordan is feeling low energy. Carbohydrates are the body's main source of quick energy and when Jordan doesn't have enough, his cells can't produce enough glucose, which in turn can't be turned into the ATP that powers his muscles. </p><p>Enzymes that help break down starch into glucose, such as amylase, slow down when there aren't enough carbohydrates. Coming up against this barrier, Jordan's cells can’t access the energy from the fats he’s stored, which release energy more slowly. Since Jordan’s muscles fatigue faster, eating more carbohydrates before running would provide the necessary quick energy for a better performance.</p>]]></description>

Without enough glucose, Jordan’s cells cannot efficiently perform cellular respiration, causing their muscles to tire faster during exercise. Additionally, enzymes like amylase, which help break down starch into glucose, rely on the presence of carbohydrates to function effectively; a diet low in carbs reduces the substrate for these enzymes, slowing energy production.
