With the characters being hard-shelled crustaceans it doesn't make much sense for them to appear to have a 'soft' surface such as needlefelt - instead, I'll probably go for a hard painted surface allowing for more intricate detail and a more realistic "shelly" look.

SPRAY/AIRBRUSH:

Paper is the easiest and fastest option as if you need a new mouth-shape you can literally just draw it and cut it out in a matter of minutes. However, it doesn't work with all animation styles and can be seen as a bit of a cop-out.

Plasticine is malleable and easily moulded into new face shapes - but may not stick to the wooden puppet surface properly. It also might just look a bit weird with crabs being largely exoskeletal and plasticine being a matte, soft, blobby surface.
