The gurullos are a typical recipe from Freila ( Granada) my mother’s town.
Ingredients:
1Kg of rabbit
200gr gurullos
2 tomatoes
1 onion
1 dried pepper
1 green pepper
2 patatoes
1 garlic head
Salt, oil and saffron
Preparation:
The rabbit is fried with salt, a head of garlic and dried pepper. Chopped green pepper, onion and chopped tomato are added, when everything is well fried, pour it into a saucepan with boiling water, add ground pepper and food coloring, add salt and boil until the meat is tender . When the meat is almost cooked, add the chopped potatoes and the gurullos (a handful per serving) and boil until everything is cooked
If you want to make the gurullos by hand, knead a little flour with water and salt, make thin strips with both hands and then take the strip with one hand and with the other make the gurullos making sure they fall on a bed of flour, then sift and leave to dry for at least a day .

Rosa M Olivares
