Hello, my name is Maggie Redgate. I attend Suffern High School and I am in 10th grade. I come from a big family, I am one of 5. I play field hockey and i am a goalie. I am taking this class because I've always loved to make things. Growing up I would always make things with my grandma so she was my inspiration for taking this class. To this day, * still enjoy making things with my grandma whenever I am with her. I am looking forward to what this class will be like.

The first lab we did in Gourmet Foods was we made a dip for the Superbowl. My group worked very well together in order to get things done in time and we accomplished that. Our final project came out very well. My group enjoyed it and so did the other groups. I thought the dip was delicious and savory but it was a little bit on the sweeter side. Another recipe I enjoyed was the pizza dip. I thought it came out amazing. I didn't try the spinach and artichoke dip because I'm the not biggest fan of it but other than that I enjoyed everyone else's. In the end, I thought everyone did a great job with this lab.

My group made classic brownies with chocolate chips in them. For decorating we decided that because we kept it simple with the mix, we should decorate them to the max. We used pink frosting, M&M's,Hersey kisses, and powdered sugar. My group works very well together. We all get along and we have fun while doing labs. We settle each of our tasks before hand and we get stuff time on time. I tried everyone's creation of brownies from each team. They were all very good. I personally enjoyed the white teams creation I enjoyed the way they decorated their final. Also the blue teams brownies were very moist and crispy, just the way I like them. Overall I think each team did an amazing job with this lab. After analyzing everyones final, I thought that my group could of upped our decorating game a little. Although I felt that we did a great job, I felt that everyone else's labs looked a little more professional and put together. Next time I think that my group should spend more time decorating and making sure it looks presentable.

I loved this cooking day. I thought that it was so fun playing with all the tools and experimenting with them. I loved that we had a variety of fruits and vegetables to choose from. I played around with a lot of foods. Some of them came out good others, not so much. One tool that I used was a metal pole with a circular blade going around it. This too is called a curl cutter and it is used to cut foods into a spiral shape. Using this tool I was able to create curly fries that we fried the next day: they were very delicious! In the future, my group can use this tool to make curl fries for a side or to cut foods to help garnish the plate. Overall I had a great time doing this lab.

For this lab my group and I made 2 different types of butter. Lindsey and I made a chocolate cinnamon butter while Zoe and Kim made a mixed spices butter. Lindsey and I decided to do a chocolate cinnamon butter because we knew we wanted to do something with chocolate but we needed a spice. After doing research on what spices pair with chocolate we finally decided on cinnamon after finding a good recipe. We didn't try to mix anything else with chocolate because we knew our final decision would be cinnamon. The research for flavor pairings came up with a few pairings that sounded very weird to us. Many spices go with chocolate which surprised me. Our final product came out very well. It tasted great and it was the perfect balance of chocolate and cinnamon. If i were to use this butter in a meal i would use it in a dessert meal beside the butter is on the sweeter side. I had a lot of fun with this lab and I am very happy with the way it turned out

For this lab my group received chicken. After thinking about all the flavor pairings for chicken, we decided on our "mixture". We mixed olive oil, basil, italian seasoning, garlic powder, and lemon juice together and then painted it on the chicken. After the chicken was covered in our mixture, we rolled it in extra crispy bread crumbs. We went with this flavor pairing because it was simple and we all knew it would taste good. Going around and trying everyone else's chicken, I was very impressed. Everyone's chicken was very juicy and their flavor pairings were creative and tasteful. The cooking method I loved was the baked chciken. My group chose to bake half of the chicken and it came out amazing. It was crispy and juicy at the same time and I loved it. I am very proud on my groups and all the other groups on this lab. Everyone did amazing and they were all very good!

For this lab my group made original brownies with mint flavored icing in the middle. I was the one to chose this recipe. I chose it because I have the biggest sweet tooth and it was the first dessert recipe I saw so I took it and ran back to my kitchen. An issue we had along the way was that our brownies weren't done when time was up so we had to rush to get the icing on. We ended up not putting the icing in the middle because we had no time so we slapped it on top of the brownies. That didn't work out too well because the brownies were still very hot. Although it looked like a disaster, it actually tasted really good, I was surprised. Although this lab was a disaster, I had a lot of fun.

For this lab my group made cheesy garlic bread. We actually made our own bread for this recipe as well. The herb/spice that was highlighted in this lab was garlic. We used garlic to make a garlic butter with a little bit of parsley. This was definitely my favorite blog by far because the final product was very very
good. I've always loved garlic bread but the homemade bread with it really won it for me. I felt that my classmates were happy with the final product as well because I kept having to cut more because it kept going so fast! I am very happy that everyone enjoyed it as much as my group did.

For this lab my group made turkey with melted cheese on top of a ritz cracker. This lab was definitely interesting to say the least. With only 15 minutes my group rushed to figure out what to do and how to put it together. A problem we had along the way was the melting of the cheese. We first tried to melt it in the microwave but when we placed it onto the cracker, it came out in clumps. So we came up with another idea and melted the cheese in a frying pan we some heavy cream to help liquify the texture. That finally ended up working and the cheese spread on evenly. We chose to make what we made because it seemed simple and quick with the limited time we had. The final results of our product didn't seem so appetizing but I thought it tasted pretty good. I look forward to more of these challenges in the future because I really enjoyed the challenge.

For this lab my group made taco pizza rolls and in my opinion, they were amazing. We rolled up the taco seasoned ground beef with cheese in pizza rolls and topped it with more cheese, lettuce, and sour cream. I found this recipe on Pintrest and my group decided it would be a good idea. An event I would serve this at would be a Mexican type party like Cinco de Mayo. I would serve this to anyone really. Little kids would love it because who doesn't love tacos. They're easy to eat so it wouldn't be a challenge for kids to eat. On the day we were making this, only 2 people were here but a 3rd showed up for the topping part. It was a struggle but we managed to do it in time. Coming from a huge taco lover, I loved this recipe.

For this lab my group made s'mores cups. We used cupcake tins to make the graham cracker mold and topped it off with marshmellow and chocolate ganache. Everything went well for this lab. Some of the molds were a tad bit burnt but it's okay, everyone loves burnt marshmallows. From completing this lab I learned that there are many ways to not use plates or any utensils. You can make everything out of food. If I were to make this again I would use melted chocolate instead of the ganache because I fe that it would taste better. Other than that, I am very proud of the final product of this lab.

This was a very easy recipe and the final result was very good so there were no challenges through the the way. I really enjoyed the muffins and i wouldn't change anything if I made them again.

For this lab my group made chicken cordon bleu. The mother sauce we used was veloute sauce in the form of a white sauce. The sauce took a lot of time to make because there was many steps in order to complete it. It contains butter, flour, chicken stock, and seasonings. Some variations include allemande sauce, normandy sauce, cardinal sauce, and bercy sauce. We selected a recipe that included a different sauce so we substituted in the white sauce. In the end, everything came out amazing and it was truly mouth watering. I am very proud of my group and the way everything came out in the end. It took a lot of time but it was definitely worth it.
