The time period of the Alchemist was set in a non specific time from the past. It was pre-modern time before modern technology. 
2. The pros of being a a Shepard are they got to travel the land in search for new pastures, they make money by selling wool. Which makes it easy for them since wool was an essential for clothing and etc. They also sold their sheep for meat. The cons of being a Shepard is how they had no spouse/children because they would spend most of the days with sheep. Another con is that people wanted freedom from this job since you always had to follow the sheep and take care of hem, but it was hard to get out of.  
3. The pros of being a priest are how being a priest was an honor because of how important religion was. Priests were very educated. Compared to other people back in the day, not everyone had easy access to education unless they were rich or royal. Cons of being a priest is that since priests spent their days teaching about the word of God, they couldn't really do anything. For example they couldn't marry. They made a commitment to the people of church and God. 
4. If I had to choose to be a Shepard or a Priest, I would rather be a Shepard.
