Instead of spending a lot of time with instruction, our teachers encouraged us to play with the dough. It was all together fun and didn't feel rigid in structure. It was after a bike ride with a group with and a great teacher we'd bonded over the previous few days so I felt really safe. The farmer teaching us was funny and welcoming and drank milk straight from the udder (and sprayed us all). We all had some time to try it out. I remember being in awe over the natural beauty. I also enjoyed that we were given a visual map of all our stops in the beginning with an overview of each stop. Walking between stops we had time to talk amongst ourselves and discuss the stops. So it was structured, but with room to expand.
