         <description><![CDATA[<div>1lb ground beef<br>1/3 cup oatmeal<br>2 eggs<br>1/2 cup grated parmesan cheese<br>1/2-3/4 cup BBQ sause<br><br>Preheat oven to 350.<br>Mix beef, eggs and oatmeal in large bowl. Add enough BBQ sauce that the meat is very moist.&nbsp;<br>Add cheese and more BBQ sauce if needed.<br>Bake in a corning ware dish for 45-50 minutes or until the top is completely brown.<br>Let sit for 5 minutes before serving.<br><br><br></div>]]></description>

Morning or noon: add 330 g water, 380 g flour and mix for 3 minutes. Rest for 20 min.<br>3. Add 2 tsp kosher salt,&nbsp; knead 5 min.&nbsp;<br>4. Pour into 2 round or 1 large 9x13 metal pan oiled with 2 tbsp olive oil, cover and let rise 4-6 hrs.<br>5. Preheat oven 500 F<br>5. Scatter olives and/or tomatoes, sprinkle 4 Tbsp olive oil, 1 1/2 tsp kosher salt, and 1 tsp oregano.<br>6. Bake about 25 min.&nbsp;</div>]]></description>

         <description><![CDATA[<div>by Gertrude Tower<br>In 1894, Steven Betasso left Colorado mining and returned to Italy to marry and bring back Mary Pastore. When she came, the new Mrs. Betasso brought Italian garlic, small pansies and "wine plant" (a very close kin to rhubarb). All thrived on Sugar Loaf, and today patches of rhubarb and "Dago pansies" grow wild on many old homesteads and mining claim sites.<br>&nbsp;Rhubarb wine has been, and still is, a popular home brew on Sugarloaf.<br>&nbsp;<br>&nbsp;RHUBARB WINE<br>&nbsp;Gertrude Tower<br>&nbsp;This recipe, and the one for chokecherry wine (chokecherries grow wild in abundance) come from Gertrude Tower whose father, Arthur Weaver, home steaded here in 1905.<br>&nbsp;Gertrude and her husband Elvis live in the log cabin she was born in more&nbsp;than 60 years ago.<br><br>&nbsp;5 Ibs. rhubarb (fresh)<br>&nbsp;1 lb. lemon (rind and all, ground)<br>&nbsp;1 gallon water<br>&nbsp;Let stand 48 hours.<br>&nbsp;Strain through cheesecloth and add:<br>&nbsp;4 Ibs. sugar<br>&nbsp;5 grains dry yeast<br>&nbsp;Keep warm and let work until the bubbles stop&nbsp;coming to the top. Bottle and open once a week<br>&nbsp;for a month.<br><br></div>]]></description>

         <description><![CDATA[<div>Super simple, yummy appetizer that is sure to be a hit! &nbsp;<br>2 14 oz. cans artichoke hearts, finely chopped<br>2 4 oz. cans green chili(heat however you'd like)<br>1-1 1/2 cups mayo (I eyeball the amount, I don't like too much mayo)<br>1 5 oz. container shredded or shaved parmesan cheese<br>Finely chopped jalapeno's - eyeball the amount based on how much heat you'd like.<br><br>Pre-Heat oven to 350 degrees.<br><br>1.&nbsp; Drain and rinse the artichoke hearts.&nbsp; Squeeze out all excess water from the hearts.&nbsp; Finely chop the hearts and put in a medium mixing bowl.<br>2.&nbsp; Add 2 cans of green chili's to the mixing bowl.<br>3.&nbsp; Add the mayo to the mixing bowl.<br>4.&nbsp; Add 3/4 of the parmesan cheese to the mixing bowl.<br>5.&nbsp; Add the finely chopped jalapeno's to the mixing bowl.<br><br>Mix all of the ingredients and pour into an 8" X 8" Pyrex dish or a glass pie dish. &nbsp;<br>Sprinkle the remaining parmesan cheese on top of the dip.<br>Bake on 350 degrees for 35 minutes or until the top is a golden brown.<br><br>Serve with pita chips, tortilla chips or crudites. &nbsp;<br><br>Enjoy!  </div>]]></description>

         <description><![CDATA[<div><em>Adapted from the </em><strong><em>Bouchon Cookbook</em></strong><em> by Thomas Keller<br></em><br>These brownies will be dark, dense, moist, and rich.&nbsp; I recommend making them a day in advance and letting them sit out exposed to the air.&nbsp; They'll get better and become chewier. <br><em><br></em><strong><em>Ingredients</em></strong><br>150 g Butter<br>50 g All Purpose Flour (or use any GF&nbsp; for gluten free brownies)<br>20 g Arrowroot powder<br>50 g Cocoa<br>1 tsp Salt<br>2 Eggs<br>162 g Sugar<br>2 tsp Vanilla Extract<br>100 g Chocolate Chips or chunks<br>200 g fresh tart cherries or raspberries <em>or</em> 100 g dried<br><br><strong><em>Directions</em></strong></div><ol><li>Melt butter until almost entirely liquid with some floating solid pieces in it</li><li>Whisk together flour mix, arrowroot powder, cocoa powder, and salt until combined</li><li>Combine eggs, sugar, and vanilla in the bowl of a mixer with a paddle attachment on medium low</li><li>Slowly alternate adding the butter and flour mixtures, combining after each and breaking up any clumps.&nbsp; Mix until just combined trying to avoid adding too much air into the mixture</li><li>Fold in chocolate pieces</li><li>Preheat oven to 325 F</li><li>Butter the sides or a 9x9 pan or a 9” springform pan (my preferred).&nbsp; Lining the sides and bottom with parchment paper will make it easier to get out later. &nbsp;</li><li>Pour in batter and let rest in pan while the oven is heating up.&nbsp; If adding fruit, sprinkle on top now</li><li>Once oven reaches temperature, bake for 20-30 minutes or until a tester comes out clean when not hitting a piece of chocolate.&nbsp; Add 5 minutes if using fresh fruit</li><li>Allow to cool thoroughly before removing from pan.&nbsp; Place on a rack, still wrapped in parchment paper to finish cooling and setting.</li></ol><div><br></div>]]></description>

         <description><![CDATA[<div>Marinade:<br>4 chopped green onions<br>2 T Low sodium Soy sauce<br>3 T olive oil<br>1/2 tsp Italian seasoning<br>3 tsp fresh lemon juice<br><br>Flank Steak: Trim excess fat.&nbsp; Score both sides of the flank steak at a forty-five degree angle. cover both sides of the steak with fresh cracked pepper.&nbsp; Place steak in a ziplock gallon bag and pour the marinade over steak.&nbsp; Seal the bag and massage the marinade into steak.&nbsp; Place in the refrigerator for 24 hours.&nbsp; Grill or broil to desired temperature. &nbsp;<br><br>*With larger flank steaks you may want to double the marinade.          <description><![CDATA[<div>Ingredients:<br>3 1/2 cups peeled and diced potatoes<br>1/3 cup diced celery<br>1/3 cup diced carrots<br>1/3 cup finely chopped sweet onion<br>3/4 cup diced cooked ham (Whole Foods sells ham slices in the packaged bacon section of the store)<br>3 1/4 cups water<br>2 T chicken bouillon granules<br>1/2 tsp salt, or to taste<br>3/4 tsp ground white pepper<br>5 T all-purpose flour<br>2 cups milk<br>2 green onions - optional<br><br>Directions:<br>1.&nbsp; Combine the potatoes, celery, onion, ham and water in a stockpot.&nbsp; Bring to a boil, then cook over medium heat until potatoes are tender, about 10-15 minutes.&nbsp; Stir in the chicken bouillon, salt and pepper.<br>2.&nbsp; In a separate saucepan, melt butter over medium-low heat.&nbsp; Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute.&nbsp; Slowly stir in milk as not to allow lumps to form until all of the milk has been added.&nbsp; Continue stirring over medium-low heat until thick, 4-5 minutes.<br>3.&nbsp; Stir the milk mixture into the stockpot, and cook soup until heated through.&nbsp; Serve immediately (May sprinkle with the green part of green onions.)</div>]]></description>

         <description><![CDATA[<div>1 1/2 cups sugar<br>2 tsp vanilla<br>3 cups flour<br>1 1/2 cups crushed Lays Potato Chips<br>3 sticks butter<br>2 egg yolks<br>1 tsp baking soda<br>1 cup chopped pecans<br><br>Directions: Cream butter and sugar.  Add vanilla and egg yolks.  Sift flour with baking soda.  Add crushed potato chips and pecans.  Hand mix well and place in refrigerator for 30 minutes.  Make into small balls. (Use a 1 1/2 inch ice cream scoop, baking for the upper time.  Makes about 3 dozen, 3 inch cookies.). Place on ungreased cookie sheet with parchment paper and press with floured fork.  Keep dough in refrigerator between batches.  Bake at 350 degrees for 12-15 minutes.</div>]]></description>

         <title>Chicken Pot Pies</title>

         <description><![CDATA[<div>Wendy’s Chicken Pot Pie</div><div>(Makes two 9-10” pies)</div><div><br></div><div>Ingredients:</div><div><br></div><div>- 1 bunch small-medium carrots with tops on (they’re sweeter)</div><div>- 1 whole head of celery (bonus if the ribs have some leaves—rinse &amp; chop them up for the fresh herb mixture!)</div><div>- 1 small yellow onion</div><div>- 1 medium-large red potato</div><div>- 5 cloves garlic</div><div>- 1 package fresh poultry blend herbs (sage, rosemary, &amp; thyme)</div><div>- 1 quart (4 cups) chicken broth</div><div>- 1 lb bag organic frozen peas</div><div>- 1/2 cup to 1 cup whipping cream or whole milk (depending on taste &amp; how creamy you want)</div><div>- 2/3 cup flour</div><div>- 1 tbsp butter or vegan butter (I use Earth Balance)</div><div>- 1 tbsp Better Than Bullion roasted chicken base</div><div>- 1 package pre-made refrigerated pie crusts (Or your favorite crust recipe)</div><div>- 1 egg + tablespoon of water (for egg wash)</div><div>- Olive oil</div><div>- Salt and Pepper</div><ul><li>2 rotisserie chickens</li></ul><div><br></div><div>Step 1: Prep your ingredients.</div><div>Preheat oven to 375 degrees. Spray oil or grease two pie dishes. Open up pie crusts&nbsp; and bring to room temp, either on the counter for 30 minutes, or on top of the preheating oven for 15-20 minutes.</div><div>Chop carrots, celery, onion, and potato into 1/4” dice. All can go in the same bowl, as they go into the pan at the same time. Mince garlic cloves. Pick herb leaves (sage, rosemary, thyme and celery leaves if you’ve got them) from stems and chop very fine—all herbs can go into a small bowl together. Gently defrost the peas in the microwave in 30 second increments, stirring in between, being careful not to cook them—you just want to get them unfrozen. Measure out your flour, cream, and broth. Beat the egg with the water and set aside.</div><div><br></div><div>Step 2: Cook the filling.</div><div>Heat a large Dutch oven or soup pot over medium heat. Add 1 tablespoon of olive oil. When oil is shimmering, add the carrots, celery, onion, and potato and stir well to coat the veggies. Cook for 5 minutes, then add garlic and stir well. Turn heat down slightly and cover veggies. Cook for 10-13 minutes covered, stirring occasionally. Uncover and check for tenderness—the veggies should be fairly tender when bitten into, but not mushy. When veggies are tender, add fresh herbs,&nbsp; shredded chicken, 1 teaspoon salt, and pepper to taste. Cook another 2 minutes, stirring, then push veggies to the side to reveal the bottom of the pan. Add vegan butter and melt. Add flour and stir to combine with butter, then stir everything together, coating the veggies, and cook another 2 minutes. Add chicken broth, thawed peas, and Better Than Bullion, stirring to dissolve and turn heat up slightly to bring to a simmering boil. Stir constantly to avoid sticking. Turn heat down to medium-low and simmer, stirring fairly frequently to allow flavors to come together for about 7-10 minutes. Add cream and remove from heat, stirring to combine. Taste for seasoning and add more salt and pepper as needed.&nbsp;</div><div><br></div><div>Step 3: Assemble the pies.</div><div>Pour half of the filling into each prepared pie dish. Unroll your pie crusts on a clean, dry surface and carefully cover each pie dish, gathering the crust at the rim and pressing with a fork to seal the edges. Make slits in the top of the crusts to allow steam to vent. Brush egg wash over each pie crust.&nbsp;</div><div><br></div><div>Step 4: Bake the pies.</div><div>Put both pies in the middle rack of the oven and line the rack below with aluminum foil to catch any liquid that bubbles over the edges of the pies (this will avoid smoke and burning on the bottom of the oven). Cook for 25 minutes and check crust edges. If edges are getting too dark, cover with tin foil or pie crust shields. Cook another 20-35 minutes or until inside is bubbly and crust is golden brown, keeping an eye on the edges to avoid burning. Let pies rest for 10 minutes before serving.</div>]]></description>
