         <description><![CDATA[<div>The iconic red, white, and green flag with the eagle and the snake. Today's rendition of the flag was adopted on September 16, 1968. The story of Mexico is right in it's flag. The God of the Aztecs told them to build a civilization where they saw an eagle eating a snake while perched on a cactus growing out of a rock in the middle of a lake. Each color also represents something, Green is hope, White is union, and Red is the blood of heroes.</div>]]></description>

She came to America in 1989 hoping she could get surgery, but doctors told her if they attempted surgery, it would damage her leg even more. My dad came from Puebla, Mexico after my grandfather came to work her for a short time.</div>]]></description>

         <description><![CDATA[<div>There are many well known Mexican holidays, such as Dia de los Muertos (Nov 2) and Reyes Magos (Jan 6). Christmas is also celebrated, know as "Navidad." There are some things that are done differently in Mexico during Christmas, such as "Las Posadas." The tradition goes like this: two people dress as Mary and Joseph and walk around singing a song to homes, asking for shelter (or "Posada") and the reply will often be "No Shelter"/ "No Posada" and they will continue until someone lets them in. The home or church that accepts them will have feasting, celebration, music, and the biggest surprise of them all, the Pinata! </div>]]></description>

         <title>Sopes Recipe</title>

         <description><![CDATA[<div>Ingredients<br>3 cups masa harina<br>1 tablespoon salt<br>2 cups warm water, or as needed<br>1 quart oil for frying<br>Steps<br>1. Whisk masa harina and salt together; stir enough water into mixture until dough is smooth and holds together. Form dough into 2-inch balls. Flatten each ball to a 1/2-inch thick circle.<br>2. Heat oil to 400 degrees F (200 degrees C) in a deep-fryer or large saucepan.<br>3. Fry dough in the hot oil until sopes are just lightly browned, about 30 seconds per side. Remove sopes with tongs and place on a paper towel-lined plate; cool just until sopes can be handled. Pinch the edges of each sope together forming little 'boats'. Return to hot oil and fry until golden and cooked through, 1 to 2 minutes.<br>4. You can add beans, Shredded meat, vegetables, Mexican cheese, and Mexican cream </div>]]></description>
