- Mendoza empanadas are filled with a lot of onion, olives and hard-boiled egg. They are mid-sized and baked. If they are fried, the name of this dish is "pastrys"

- The original Jujeña empanada is made of llama meat or charqui de llama (meat dried with salt in the sun). The empanada is always with a tipycal llasawa, a sause made of tomatoes and locoto chili pepper.
