The flashbacks are symbolic to represent the contrast in Willy and biff’s relationship. In the past they both see greatness in each other and they are close. Compare that to the present that has reversed, they see each other as lost potential especially Willy towards Biff. 
2. Ben always checking the time is symbolic because we know he is dead in the present, so it represents Ben’s life running out of time.
3. Time is also very important to Willy because he is never content with the present, we see this through him always in flashbacks and his obsession with a bright future.
