You really must visit the Kanlı Kavak and you really should visit the Omm museum.I think this museum is very beautiful. If you go to Eskisehir, this place you won’t regret it.

Festivals such as kite fest are organized every year.  If I were you, I'd take part in these events. Also, you can camp there and you can watch the sunrise. It is really amazing.

It has a long history and people believe that the one you climb the tower with is the person you're going to marry.. Visiting the Ayasofya Mosque is a must. If I were you, I would go to the Kız Kulesi, which is another beauty.

After the cheese museum, if I were you, I’d visit the Castle of Kars and you can drink something in the cafe which it is near the castle and you can watch the view. I’d suggest you walk on the street and see the Russian architecture. Make sure you do shopping in dairy shop because Kars is famous with its dairy products. I’d suggest you visit Çıldır Lake, eat goose and trout. Finally, you should visit Ani Harabeleri. If you go in winter, you should go to Sarıkamış Ski Resort.   
About accommodation, I think you should stay in a hotel.
