The traditional Christmas Eve dinner is lean, as it completes the 40-day Birthday Post. By old Bulgarian custom dishes are odd number - 5,7,9 - wheat, boiled wheat, oss, beans, cabbage sirmes, wine. Even these dishes are festive and delicious, prepared by the skillful hands of the Bulgarian. Traditional fruits such as apples, pears, quinces, walnuts, grapes, corn are also present at the table. There is a prayer traditionally pronounced by the oldest man in the house. The Christmas table lay on the ground. By midnight, traditionally, each house comes in the house - the example of the shepherds, they bring the good news about Christ's birth, sing Christmas songs, and bless the house and the blessings.

Required Products:

beef - 300 g
beet - 300 g
white cabbage - 400 g
potatoes - 500 g
carrots - 100 g
root parsley - 2 PCs.
onions - 2 heads
garlic - 3 cloves
clarified butter - 2 tbsp. spoon
fat - 50 g
sweet pepper - 1 PC.
Bay leaf - 1 PC.
sour cream - 150 g
parsley and dill
ground black pepper, salt to taste

How to prepare a recipe:
Boil the meat in 3 liters of water, add salt and pepper. Beets, cabbage and onions cut into strips, potatoes - slices.
Beet fry in butter, add a tablespoon of vinegar (3%), stew until tender in small amount of broth, add sugar (1 tablespoon), tomato paste (2 tablespoons). Strain the broth and continue to cook. Meat cut into cubes and put in boiling broth, add potatoes, cabbage and cook for 15 minutes. Then add the beets, vegetables and sweet pepper cut in shreds, spices. Cook for another 15 minutes. Add chopped garlic, pounded with fat and bring to a boil. Then let stand another 20 minutes.

ingredients:

low fat cottage cheese (300 grams);
chicken eggs (2 pieces);
flour (1 tablespoon);
semolina (2-3 tablespoons);
sugar (50-60 grams);
sour cream (3 tablespoons);
a pinch of salt;
vegetable oil.

Method of preparation

In large bowl, mix cottage cheese with sour cream. Gradually add the flour, semolina, salt and sugar. Beat eggs. Carefully knead. Leave the mixture for 20 minutes to semolina swelled.
Preheat a frying pan with plenty of vegetable oil. Form small balls, which are neatly spread on a pan.
Fry until Golden brown on both sides.

Scotland - New Years Eve, also called Hogmanay

Hogmanay is the Scots word for the last day of the year
It may have originated from Gaelic or from Norman-French
Historically, Christmas was not observed as a festival and Hogmanay was the more traditional celebration in Scotland. The winter solstice holiday tended to be at New Year when family and friends gathered for a party and exchange presents, especially for the children.
'The Bells' is the phrase used to describe the midnight hour when New Year's Eve becomes New Year's Day.
Burns' 'Auld Lang Syne' is sung to celebrate the start of the New Year at the stroke of midnight, not just in Scotland but in many English-speaking countries.
The Guinness Book of World Records lists 'Auld Lang Syne' as one of the most frequently sung songs in English. The song is sung or played in many movies, from 'It's a Wonderful Life' to 'When Harry Met Sally.'
To sing 'Auld Lang Syne' a circle is created and hands are joined with the person on each side of you. At the beginning of the last verse, everyone crosses their arms across their breast, so that the right hand reaches out to the neighbour on the left and vice versa. When the tune ends, everyone rushes to the middle, while still holding hands.
An important element of Hogmanay celebrations is to welcome friends and strangers, with warm hospitality and of course a kiss to wish everyone a 'Guid New Year'. The underlying belief is to clear out the vestiges of the old year, have a clean break and welcome in a young, New Year on a happy note.
'First Footing' – the 'first foot' in the house after midnight is still very common is Scotland. To ensure good luck, a first footer should be a dark-haired male. Fair-haired first footers were not particularly welcome after the Viking invasions of ancient times. Traditional gifts include a lump of coal to lovingly place on the host's fire, along with shortbread, a black bun and whisky to toast to a Happy New Year.
To first foot a household empty-handed is considered grossly discourteous, never mind unlucky!

On 6th January morning, families gather around to take a delicious "Roscón de Reyes" while the children open the presents that the Three Wise Men have brought to them.
The " Roscón de Reyes" is the typical cake of that day. Inside there is a bean or a little surprise. Those who find it must buy the Roscón of the following year.

Gingerbread from Poland

1/4 cup of honey
80 g butter
1/2 cup of fine brown sugar or powdered sugar
1 egg
2 and 1/4 glass of wheat flour
1 teaspoon of baking soda
1.5 - 2 tablespoons of gingerbread spice
optional: 1 teaspoon of cocoa (if you like, when the gingerbreads have a darker color)

Honey, butter and sugar warmed in a pot and mix, to dissolve sugar, cool. Add the remaining ingredients and make or blend. If the cake is too loose, add more liquid honey to achieve the right consistency and mix. If the dough is too soft, cool (it will roll better).

Roll out on the board for a thickness of 2 - 3 mm, lightly sprinkle with flour (thicker gingerbreads are softer after baking). Cut gingerbreads of any shape and put on a baking tray lined with baking paper.

Arrange on a baking tray lined with baking paper and bake for about 8 - 10 minutes at 170 - 180ºC. Be careful not to bake too long, they will be too fragile and will have a bit of bitterness. Remove from the oven, cool on the grill.
