         <title>Meeting the Nutritional Needs of a Three Year old</title>

         <description><![CDATA[<div>It is very important for children to get the right amount of nutrients from the foods they eat because their bodies and brains are working hard to grow and learn. That is why I chose to use these foods in my meal plan, all of the meals this plan consists of meet the nutritional needs of toddlers. For example, everyday a toddler needs plenty of calcium, carbohydrates, proteins, iron, and fats. All of these are essential to help make their bones strong, provide them with enough energy, and to keep them healthy and help fight sicknesses. Every meal plan contains at lest five fruits or veggies, 3 glasses of milk a day, proteins, and some form of carbohydrates. </div>]]></description>

         <description><![CDATA[<div>Cheesy Spinach Bites<br>*********************************<br>Ingredients: <br>- 1 medium onion<br>- 2 garlic cloves<br>- cooking spray<br>- 1 tbs olive oil<br>- 6 large eggs<br>- 1 cup cottage cheese (low fat)<br>- 1 oz mozzarella cheese<br>- 1 oz parmesan cheese (grated)<br>- 2 cups spinach<br><br>Directions:</div><ol><li>Preheat oven to 375 degrees. Dice onion and mince garlic. Spray a muffin tin with cooking spray, then set aside.</li><li>Heat oil in a sauté pan over medium heat and cook the onions and garlic until cooked through and caramelized - about 10 minutes.</li><li>Whisk eggs together in a bowl.</li><li>Add eggs, cottage cheese, mozzarella, Parmesan, spinach, and onion/garlic mixture to a food processor. Pulse to combine.</li><li>Pour egg mixture into the prepared muffin tin and bake for 20-25 minutes or until the filling is set and eggs are golden on top.</li></ol>]]></description>

         <description><![CDATA[<div>Hidden Veggie Mac &amp; Cheese<br>*********************************<br>Ingredients:<br>- 2 carrots peeled and sliced<br>- 1/2 piece small head of cauliflower chopped up<br>- 1/2 pieces small butternut squash chopped up<br>- water (for boiling pasta)<br>- 8 oz elbow pasta<br>- 1/4 cup milk<br>- 1/2 tsp salt<br>- 1 1/2 cups shredded cheddar cheese<br>- 4 oz cream cheese<br>- 2 tbs butter</div><div><br>Directions:</div><ol><li>In a small saucepan, add the carrots and cauliflower and enough water to just cover the veggies.</li><li>Bring to a boil and cook for 5 minutes, then add the butternut squash, and cook a further 5 minutes.</li><li>Meanwhile, cook the pasta according to package directions, drain and set aside.</li><li>Drain the veggies, and add them to a blender with 1/2 cup of water. Blend until pureed into a smooth consistency.</li><li>Add the puree to a large saucepan, add the milk, salt, cheese, cream cheese and butter.</li><li>Heat gently, and use a whisk to blend it as it all melts together.</li><li>Add the cooked pasta to the sauce, and mix well.</li></ol>]]></description>
