bubbl.us is a helpful way for students to brainstorm their ideas. It's very intuitive, free, and students can create an account and save their work. Teachers can also use it to easily create outline templates for students to use when reading a book or story. Works great for essay writing!

This app is useful for showing how we learned something.

This is not only a desktop application like splashtop. Doceri has a lot of offline iPad App tools that can replace several other screen casting Apps.

If you can't buy all the Apps in the suite I suggest Pages, Keynote and iMovie. These are the productivity applications that Manor ISD purchased when we rolled out our iPad 1:1 program last year. Google Drive is making strides and should be a great free alternative to Apple.
