In 1111 Heinrich V goes to Rome In order to receive from the Pope the crown of Emperor of the Holy Roman Empire.
After him there is a certain Johannes Defuk from Augsburg, Germany.
Defuk is a passionate wine lover and orders his servant Martin to go on and mark every inn that serves a very  good wine with an EST at the entrance.
EST is a Latin word which means "THERE IS".
On his arrival in Montefiascone Martin is so pleased with the high quality wine that he writes the word EST three times EST!EST!!EST!!!
