         <description><![CDATA[<div>New Year's Day is a public holiday. It is a day off for the general population, and schools and most businesses are closed. Government offices, organizations, schools and many businesses are closed in the USA on New Year's Day. Public transit systems do not run on their regular schedules. Where large public celebrations have been held, traffic may be disrupted by the clean-up operation. In general, public life is completely closed down.</div>]]></description>

         <description><![CDATA[<div>The start of New Year's Day, at midnight, is heralded by fireworks, parties and special events, which are often televised. Very few people have to work on the day itself. For many it is a day of recovery from the New Year's Eve celebrations the previous night. In some towns and cities, parades are held and special football games are played. The birth of the first baby in the New Year is often celebrated with gifts to his or her parents and appearances in local newspapers and on local news shows. Many people make New Year's resolutions. These are usually promises to themselves that they will improve something in their own lives. Common New Year's resolutions are to stop smoking or drinking alcohol, to lose weight, exercise more or to live a healthier lifestyle.</div>]]></description>

         <description><![CDATA[<div>Tens of thousands of people ushered in 2020 in downtown Los Angeles, gathering at Grand Park for the city's biggest free music and dance party. The gates opened shortly after 8 p.m. for the massive set-up in front of City Hall, but sound and light checks had gone on all day for the 7th annual Grand Park and the Music Center's New Year's Eve L.A. The event was billed as the city's go-to central gathering place and it is the West Coast's flagship New Year's celebration complete with live music. But beyond the entertainment, the celebration featured more than 40 food trucks serving up tasty eats for a crowd expected to be about 50,000. The only rule there was no alcohol.</div>]]></description>

         <title>New Years Holiday Foods - Pork</title>

         <description><![CDATA[<div>Pigs go around with their snouts moving in a forward motion, which is why many cultures around the world eat pork on New Year's Day to symbolize progress for the coming year.<br><br></div><h1><strong>Good Luck Pork and Sauerkraut </strong></h1><h1><a href="https://www.goodfoodstories.com/good-luck-pork-and-sauerkraut/">https://www.goodfoodstories.com/good-luck-pork-and-sauerkraut/</a></h1><div>Ingredients</div><ul><li>olive oil (optional)</li><li>3-4 pounds pork: pork butt roast, pork shoulder, bone-in loin roast, kielbasa, or any combination</li><li>4 pounds sauerkraut in brine</li><li>1 sweet, white, or yellow onion, minced</li><li>1 medium apple, peeled and diced; Macintosh, Honeycrisp, or any firm variety are excellent</li><li>mashed potatoes on the side</li></ul><div>Instructions</div><ol><li>If using a whole cut of pork such as a roast, heat a tablespoon or two of oil in a Dutch oven or large saute pan over medium-high heat and brown the meat on all sides.</li><li>If using kielbasa, you can skip this step and instead cut the sausages lengthwise and then crosswise into half-moon shapes about 1 inch thick.</li><li>In a large Dutch oven or slow cooker, stir the sauerkraut and its brine together with the apple and onion.</li><li>Nestle the roast and/or stir the kielbasa into the sauerkraut and assess how much liquid is in the pan. You may need to add up to 2 cups water if your kraut is fairly dry.</li><li>If using a Dutch oven, bring to a boil and then lower to a simmer, cooking low and slow for 3-4 hours. If using a slow cooker, cook on high for 6 hours or low for 8 hours.</li><li>When the pork is done, it will be fork-tender and falling off the bone or separating from the fat. If using kielbasa, it will have darkened significantly (and require less cooking time).</li><li>Shred the pork into bite-sized pieces and discard any large chunks of fat.</li><li>Serve with mashed potatoes, if desired.</li></ol>]]></description>
