This is the dish of dishes in Ecuador, a tasteful mixture of plantain puree, shrimp, cilantro, and peanut butter? It sounds odd but trust me it tastes like nothing you've ever had, it's absolutely delicious. Of course you're gonna have to try it with lemon and onions topped with tomato. 10/10

When exploring the world of stew Sacocho is my top recommendation it may seem unappealing to most but it really is a different type of tasty. Personally I think it is an acquired taste but as long as it's served with a side of rice you know it's gonna be good in Ecuador. 9/10

Forever I have wanted to dive deeper into my Ecuadorian heritage, my journey began with a visit to Quito, the opening to my ancestral roots. Stepping off the airplane, I was immediately encased by the vibrant wonder of Ecuadorian culture. Its spirit is barely palpable in the air. Everywhere I turned, the colors yellow, red, and blue enveloped the scenery, echoing the deep pride, love, and honor the people had for their homeland. Despite the knowledge of the country's hidden underworld, I chose to focus on the surface, immersing myself in the awe-inspiring beauty of the surrounding mountains and lush Amazon forest. With the iconic statue the Virgin de El Panecillo overlooking the city, I felt an overwhelming sense of connection with the people and the city itself. Throughout my stay, the warmth and hospitality of the Ecuadorian people left an unremovable mark on my heart. From the genuine smiles to the hearty welcomes, I was embraced as one of their own. welcomed into a community rich with history and tradition. The food was a symphony of flavors that danced on my palate. Each dish a testament to Ecuador's culinary expertise. As the days unfolded, I found myself swept up in my favorite pastime of Ecuadorian football, joining locals in their passionate celebrations with enthusiasm. Every single moment, every experience, felt like a beloved memory in the making. In the heart of Quito, amidst the bustling streets and the echoes of centuries past, I discovered a piece of myself, a connection to a heritage that runs deep within my veins in my existence. Though my time in Ecuador flew by like nothing ever has, I enjoyed each moment on the journey wishing to never leave, its impact will forever endure, a testament to the enduring spirit of a people and a land steeped in beauty, culture, and tradition.
