It has surprised me that lamb is a meat that it is used in countries of Middle East and Europe.

In Ecuador, they eat cuy (guinea pig), a popular dish often served with mote (hominy). Mote is made by soaking and cooking dried corn with cal (quicklime). My mom used to make it in a huge pot over a wood-burning stove in a small hut she called her fábrica.
