         <description><![CDATA[<div>The tradition of the <em>afternoon tea</em> is still very much alive in England. Indeed, over the centuries, the English have become so fond of this drink that it has become an integral part of their daily life and star of a social ritual that dates back to the nineteenth century.<br>Both in London and in other English cities you can find many places where you can taste the real essence of <em>5 o’clock tea</em>, including savory and sweet treats which are typically enjoyed at this time of day. So what are the secrets to <strong>preparing a perfect English tea</strong> and how did this custom start? Let’s find out.<br><br><strong>About part of History:<br><br></strong>Over the course of history, meal times have not always been the same. For example, in the first half of the nineteenth century, in England, the two most important meals of the day were <strong>breakfast and dinner</strong>, which was served around 8 o’clock in the evening; the tradition of afternoon tea, then, should be seen in this context. In fact, the story goes that<strong> the Seventh Duchess of Bedford</strong>, Anna, first had the idea in 1840 for what was to become afternoon tea when, tired from the weariness of the afternoon, asked her servants to prepare her <strong>some tea</strong> and something sweet to eat with it.          <title>Curious Facts:The first Tea did not have many similarities with the Tea we know today, both in Appearance and in the Method of Preparation. The oldest Tea was in the form of cookies or briquettes. Before use, the briquettes were kept over a fire to soften, and then they were crumbled and boiled in water to which Rice, Ginger, Orange peel, Milk and some other spices were added. Such Tea was more like a kind of soup than a beverage.</title>

Whilst the custom of drinking tea dates back to the third millennium BC in China and was popularised in England during the 1660s by <a href="https://www.historic-uk.com/HistoryUK/HistoryofEngland/King-Charles-II/">King Charles II</a> and his wife the Portuguese Infanta Catherine de Braganza, it was not until the mid 19th century that the concept of ‘afternoon tea’ first appeared.<br><br></div><div>Afternoon tea was introduced in England by Anna, the seventh Duchess of Bedford, in the year 1840. The Duchess would become hungry around four o’clock in the afternoon. The evening meal in her household was served fashionably late at eight o’clock, thus leaving a long period of time between lunch and dinner. The Duchess asked that a tray of tea, bread and butter (some time earlier, the <a href="https://www.historic-uk.com/CultureUK/British-Trendsetters/">Earl of Sandwich</a> had had the idea of putting a filling between two slices of bread) and cake be brought to her room during the late afternoon. This became a habit of hers and she began inviting friends to join her.<br><br></div><div>This pause for tea became a fashionable social event. During the 1880’s upper-class and society women would change into long gowns, gloves and hats for their afternoon tea which was usually served in the drawing room between four and five o’clock.<br>Nowadays however, in the average suburban home, afternoon tea is likely to be just a biscuit or small cake and a mug of tea, usually produced using a teabag.          <title>Today it seems natural for us to drink tea in the afternoon. Yet this European custom only dates back to the beginning of the 19th century. It was Anna Maria Stanhope, the seventh Duchess of Bedford and Marchioness of Tavistock (1788-1861) who invented afternoon tea. In her home at Woburn Abbey, the Duchess felt regularly peckish between lunch and dinner, which she described as: &#39;a sinking feeling&#39;. This lady in waiting to Queen Victoria began to order tea in her boudoir and some light dishes to go with it; she then invited some friends to join her. The practice became widespread. In the 1840s traditional afternoon tea was adopted by the Court and has remained popular ever since.</title>
