Their plates were used for armor to show spinosaurs or a t-rex maybe a velociraptor and an indominus-rex  that they are not scared of them. 
Also, the text states that the plates were used to flow the blood into the plates. 
When the blood flows the plates the plates change color so it will scare the dinosaurs away.
