When I was teaching in Canada, it was important to know the temperature, as sometimes it was too cold to let the children outside during recess/breaktimes.

I use temperature in many ways. I live in Pennsylvania where it gets very cold. I watch the temperature so I know what types of jackets we need to wear or what the road conditions might be like. The roads can get very icy so it might be dangerous to drive. As a nurse I use it to monitor someone's body temperature to see if they might have an infection or not. Certain blood tests I take have to be kept below a certain temperature to keep certain chemical reactions from happening to get a proper result. Also some medical equipment I use won't work properly if it's too cold so I need to make sure it's stored in the right temperature.

I live in Southern California. Many of my friends enjoy surfing. Even though the temperature outside is warm, the Atlantic Ocean is very cold. Most surfers wear different thicknesses of wetsuits so they can enjoy the cold water without getting hypothermia - an illness you can get from being in the cold too long. This happens in more quickly in colder water than in colder air. It’s very important for surfers to know the water temperature so they protect themselves in the correct wetsuit.

Many people check the temperature of water before they go for a swim in a pool or a lake. If the water is too cold, then they won’t go swimming (below 22 degrees Celsius is very cold, but everyone has their own comfort level). Or if it is a hot tub, you want to make sure the temperature is just right (about 38-40 degrees).

Temperature and the art of brewing green tea

If we want to fully appreciate the delicate taste of the green tea we need to brew it correctly. Heating the water to the optimal temperature will draw out the right balance between flavor, sweetness, biterness and astringency. If the temperature is too low, it may not extract the full range of flavors. If the temperature is too high, the tea will taste overly bitter and astringent. Depending on the particular tea (Chinese green teas or Japanese green teas), the ideal temperature can range from 60C to 90C, which I can measure using a thermometer.

Evelyn, the Godmother of Matei
