         <title>Gaines&#39; Turkey Soup</title>

         <description><![CDATA[Turkey Soup (great with leftover Thanksgiving turkey)

Ingredients
•	turkey (leftover turkey w/ boned pieces)
•	4 quarts water
•	6 small potatoes, diced into preferred bite size
•	4 large carrots, diced into preferred bite size
•	2 stalks celery, diced
•	1 large onion, diced
•	1 ½ cups shredded cabbage (This is not a lot. Buy the smallest fresh cabbage you can.)
•	1 (28 ounce) can whole peeled tomatoes. (chopped and include the juice)
•	½ cup uncooked barley 	•	1 tablespoon crushed garlic
•	1 tablespoon Worcestershire sauce
•	1 ½ teaspoons salt or to taste
•	1 teaspoon dried parsley
•	1 teaspoon dried basil
•	2 bay leaf
•	1 ¼ teaspoon black pepper or to taste
•	1 teaspoon paprika
•	1 teaspoon red pepper flakes
•	1 packet Goya Sazon
Directions

•	Step 1
Place the turkey (bone-in pieces and all) into a large soup pot and add the water. Bring to a boil and turn to a simmer for about an hour (until all the meat is off the bones). Remove (strain out) all the bones and chop up the meat. (Don’t chop too small. Nice bite size pieces)

•	Step 2
Strain the turkey broth as best you can to remove small pieces of bone, skin, etc. Add the chopped turkey to the strained broth, stir in all the seasoning ingredients, and bring it back to a boil.  Once boiling, reduce to a simmer and stir in all the veggie ingredients except for the cabbage and celery. Simmer for 15 minutes. Add the cabbage and celery. Simmer for 45 more minutes. (You want the veggies tender but firm.) 

•	Step 3
Eat and thank me later. And the next day it’s even better!!

         <description><![CDATA[<div><strong>Ingredients: </strong></div><ul><li>1 1/2 cup -2 Crumbled Feta</li><li>1 egg</li><li>Pepperidge Farm Puff Pastry Sheets</li></ul><div>1. Set the pastry  out to thaw.  Heat the oven to 375°F. <br>2. Line a baking sheet with parchment paper. <br>3. Mix the egg and crumbled feta cheese in a small bowl with a fork until the two ingredients are completely blended together. That is all the flavor you will need.<br>4. Sprinkle the work surface with the flour.  <br>5. Unfold the thawed pastry sheet on the work surface<br>6.  Roll the pastry sheet into a 14 x 11-inch rectangle.  With a spoon add the mixture of feta and egg to middle one side.  Make sure to only add half the mixture the other half is for the other sheet. Starting at a short side, roll up like a jelly roll.<br>7. Cut the pastry roll into (1-inch) slices.  Place the slices, cut-side down, onto baking sheets.<br>8. Bake for 30-35 minutes at 375 degrees.  <br>9.          <description><![CDATA[<div>Ingredients: <br><br></div><ul><li>3 cups all-purpose flour</li><li>2 teaspoons ground cinnamon</li><li>1 teaspoon salt</li><li>1 teaspoon baking soda</li><li>4 large eggs, room temperature</li><li>2 cups sugar</li><li>2 cups canned pumpkin</li><li>1-1/2 cups canola oil</li><li>1-1/2 cups semisweet chocolate chips</li><li>In a large bowl, combine the flour, cinnamon, salt and baking soda. In another bowl, beat the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips.</li><li>Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean.          <description><![CDATA[<div><strong>*Not my recipe, but I make it several times a year...great with or without meat, make it your own!</strong><br><br>Ingredients<br>-4 slices bacon, cut in half crosswise</div><div>-1/3 cup plus 1 tablespoon milk</div><div>-4 eggs</div><div>-Salt and pepper, if desired </div><div>-1/4 cup chopped red bell pepper</div><div>-1 can (8 oz) Pillsbury™ refrigerated crescent rolls or 1 can (12 oz) Pillsbury™ Grands!™ refrigerated crescent dinner rolls </div><div>-1 cup shredded Mexican cheese blend (4 oz)</div><div>-Chopped fresh cilantro, if desired</div><div>-1 cup Old El Paso™ Thick 'n Chunky salsa, if desired<br><br></div><ul><li>Heat oven to 375°F (350°F for Grands!™ crescents). Line large cookie sheet with cooking parchment paper. In 10-inch nonstick skillet, cook bacon over medium heat about 4 minutes or until cooked but not crisp, turning once. (It will continue to cook in oven.) Set bacon aside; drain all except 2 teaspoons bacon drippings from skillet.</li><li>In medium bowl, beat 1/3 cup of the milk, the eggs, salt and pepper with fork or whisk until well mixed. Stir in bell pepper. Pour egg mixture into skillet. As mixture heats, portions of eggs will begin to set. Gently push cooked portions with metal spatula to outside edge of skillet. Avoid stirring constantly. As more egg sets, push it to edge, and place it on top of the already set egg mixture. Cook 2 to 3 minutes or until eggs are thickened throughout but still moist.</li><li>Meanwhile, unroll dough; separate into 8 triangles. On parchment-lined cookie sheet, arrange triangles with shortest sides toward center, overlapping in star shape and leaving 4-inch round circle open in center. Crescent dough points may hang over edge of cookie sheet. Press overlapping dough to flatten.</li><li>Place bacon on each of the triangles. Sprinkle 1/3 cup of the cheese onto widest part of dough. Spoon eggs over cheese. Sprinkle with 1/3 cup of the cheese. Pull points of triangles over eggs and cheese, and tuck under dough to form ring (filling will be visible). Carefully brush dough with remaining 1 tablespoon milk; sprinkle with remaining 1/3 cup cheese.</li><li>Bake 20 to 25 minutes (18 to 23 minutes for Grands!™ crescents) or until deep golden brown. Cool 5 minutes. With broad spatula, carefully loosen ring from cookie sheet; slide onto serving platter.          <description><![CDATA[<div><br></div><div>Meat</div><ul><li>1 lb Turkey breast, boneless</li><li>2 cups Turkey gravy</li></ul><div>Produce</div><ul><li>2 cups Mashed potatoes</li></ul><div>Refrigerated</div><ul><li>1 Egg</li></ul><div><br></div><div>Canned Goods</div><ul><li>2 cups Stuffing</li></ul><div>Condiments</div><ul><li>1/2 cup Cranberry sauce</li></ul><div>Bread &amp; Baked Goods</div><ul><li>2 Unbaked pastry pie crusts</li></ul><div><strong>How To Make a Thanksgiving Leftovers Pie</strong></div><div><strong>Ingredients:</strong></div><div>2 unbaked pastry pie crusts (you can find these in the refrigerator section of your local grocery store)<br><br></div><div>Approximately 1 pound of boneless turkey breast cubed or sliced – either is fine<br><br></div><div>2 cups turkey gravy – if you don’t have enough leftover gravy, gravy from a jar is fine<br><br></div><div>2 cups mashed potatoes – you could also use sweet potatoes for a more unique flavor<br><br></div><div>1/2 cup cranberry sauce – I used a half a can of jellied cranberry sauce<br><br></div><div>2 cups stuffing – a box of stuffing will work just fine prepared per the instructions on the box<br><br></div><div>Cream or egg wash (1 egg lightly beaten)<br><br></div><div><strong>Directions:</strong></div><div>1. Preheat oven to 350°F.<br>2. Line pie plate with 1 of the unbaked crusts. I like to allow my crusts to sit at room temperature for about 15 to 20 minutes so they are easier to work with.<br>3. Add the turkey to the bottom of the pie evening out as necessary.<br>4. Pour 1 cup of gravy over the top of the turkey.<br>5. Cover with mashed potatoes smoothing out for a nice base.<br>6. Top with a layer of cranberry sauce.<br>7. Spoon stuffing over the top of the cranberry sauce.<br>8. Pour remaining gravy over the cranberry sauce.<br>9. Cover with top crust and try to flute the edges.<br>10. Vent pie crust and brush with egg wash.<br>11. Bake for 45 minutes. <br>12.          <description><![CDATA[<div>Ingredients:<br>Pack of Perdue breast tenderloins<br>Water Chestnuts<br>Bamboo Shoots<br>Baby Corn<br>Broccoli<br>Carrots<br>Celery<br>Green and Red Peppers<br>Onion<br>Stir-Fry Package<br><br>Italian Dressing<br>Soy Sauce<br>Minced Garlic<br>Worchester Sauce<br>Teriyaki<br>Honey<br><br>1. Poke holes in the Chicken Breasts with a fork.<br>2. Marinade Chicken in Italian Dressing, Soy Sauce, Minced Garlic, Worchester Sauce, Teriyaki and Honey to your liking.<br>3. Marinade for at least an hour (the longer, the better)<br>4. Once marinated, cook the chicken.  Normally takes about 15 minutes. <br>5. When chicken is done, cut the chicken in small pieces. <br><br>In a large pan, start with veggies :)<br>1. Put a little butter in a pan.<br>2. Put carrots, water chestnuts, celery in the pan.<br>3. Add bamboo shoots, baby corn. and broccoli.<br>4. Add peppers and onions.<br>5. Add package of stir-fry mix and a little water.<br>5. Once veggies are just about done, add the chicken to warm that chicken back up :)<br>6. Mix it all together. <br>7. Enjoy !! </div>]]></description>

         <description><![CDATA[<div><strong>Ingredients:</strong></div><div>1 1/2 cups all-purpose flour, plus more for rolling</div><div>1 tablespoon vegan granulated sugar</div><div>1 tablespoon white vinegar</div><div>Fine salt</div><div>1/2 cup unrefined virgin or extra-virgin coconut oil (packed)</div><div>4 to 6 tablespoons ice water</div><div>Filling:</div><div>One 15-ounce can pure pumpkin puree</div><div>8 ounces silken tofu</div><div>2/3 cup vegan granulated sugar</div><div>2 tablespoons cornstarch</div><div>1 teaspoon ground cinnamon</div><div>1/2 teaspoon grated nutmeg</div><div>1/2 teaspoon pure vanilla extract</div><div>Fine salt </div><div><br></div><div><strong>Directions<br></strong><br></div><ol><li>For the crust: Put the flour, sugar, vinegar and 1/2 teaspoon salt in a food processor, and pulse to combine. Add the coconut oil in small spoonfuls, and pulse until the largest pieces are pea-sized. Add 4 tablespoons ice water, and pulse until evenly combined. Squeeze a handful of the dough together; it should just hold its shape. If the mixture is too powdery, pulse in an additional 1 to 2 tablespoons ice water. Turn the dough out onto a large piece of plastic wrap, pat into a 1/2-inch-thick disc and chill for at least 1 hour up to overnight.</li><li>To make rolling easier, let the dough soften up a bit-it should be slightly soft when pressed-at room temperature (this may take anywhere from 20 to 40 minutes depending on the temperature of your kitchen). Roll the disc into a 12-inch round on a lightly floured surface or between two pieces of floured parchment paper. If the dough gets too warm, refrigerate it to firm it up. Ease the crust into a 9-inch pie plate. Fold the overhanging dough under itself, and crimp the edge as desired. Chill for 30 minutes.</li><li>Position an oven rack in the center of the oven, and preheat to 350 degrees F. Line the chilled pie crust with a large coffee filter or foil, and fill with pie weights. Bake until the edges are lightly golden, 20 to 25 minutes. Remove the coffee filter or foil and weights, and continue baking until the crust is lightly golden all over, 15 to 20 minutes more. Transfer to a rack, and let cool completely.</li><li>For the filling: Process the pumpkin puree, tofu, sugar, cornstarch, cinnamon, nutmeg, vanilla and 1/4 teaspoon salt in a food processor until completely smooth, scraping down the sides of the bowl as needed.</li><li>Pour the filling into the parbaked pie shell, and bake until firm and set, 40 to 45 minutes. Let cool completely on a rack. Chill for at least 2 hours up to overnight. </li><li>Slice and serve.</li><li>Enjoy!!</li></ol>]]></description>
