It's not quite true to say that as sucrose concentration increased percentage change in mass decreased. Percentage change can be positive or negative, so the percentage change changed from being a positive change, an increase in mass of the potato to a negative change a decrease in mass of potato, but the changes were quite large at concentrations of sucrose very hypertonic or very hypotonic to the concentration of the potato tissue.
