Today I decided to make choux pastries with creme patissiere. Choux pastries are french and were commonly used as centerpieces for fancy events. Some recipes that include choux pastry are Croquembouche and Profiteroles (which is just standard choux). My creation was less than perfection as I attempted to make croquembouche (a tower of profiteroles with caramel), and failed, however I still ended up with a delicious desert1

I was able to shadow three Bible classes and three history classes today. I learned a lot about different teaching styles during those classes. I also learned more about how different teachers choose to use curriculum or do their own spin off the curriculum. I also met a student who is helping teach one history class and was able to see how she and the teacher lesson plan and do tasks like that.

Today I followed the normal 8:20-3:15 school schedule, only at my house and doing AP classes the entire time. I was able to get through all of Unit 5 of AP Microeconomics today. Just notes so far, no Kahn academy yet.

Today we spent the morning hiking a leilai jungle trail. After that we went snorkeling at captain cook and then went on a night dive with mana rays! the mana rays where super friendly so that was my highlight of the day!

Today we we went on jungle hike through Leilani estates. After this we went on a drive to Two step to go snorkeling. After snorkeling we got an early dinner before going snorkeling again with manta rey's. I saw so much of gods creation and glory today. Snorkeling with the manga rey's really made me recognize Gods glory, at first it was really scary cause they got super close but then I calmed down more and got to see how incredible Gods creation can be.

Today we hiked through the jungle then later we drove to a beach called two step, we snorkeled there for a few hours then drove to go night snorkeling with manta rays, I saw God through today by how beautiful the nature was and all the creatures like the manta rays and fish, seeing all of that made me reflect on how God really made everything with every detail.

Today we went snorkeling in Kona and I saw God in all the wild life we saw and how pretty everything around us was, and how many different types of fish there were to see and how calm everything was.

Tuesday was mainly a travel day. We flew from Denver to New York and then later that night, we visited the Empire State Building. This was an amazing experience and seeing the entire city at night was beautiful. I learned that it was completed in only 410 days and has over 102 levels. This was shocking as the building height makes it impossible to believe it was completed in only a little over a year. New York has such an interesting environment compared to Colorado as well as crazy drivers and honking, but is has been such an awesome experience seeing the city :).

Today I crafted salted caramel macarons! These are a french desert known for their difficulty. However, with some precision, this dish isn't very complicated. These macarons are topped with cinnamon and filled with a caramel icing. If you've never had a macaron, they have a chewy texture with a tough exterior. I see God through baking in its intentionality and how creative he made us!

I shadowed the sixth grade teacher today. I was able to see how he manages teaching all the classes to that grade and how he helps them stay under control. I got to do a Bible project they were doing that was very fun.

today after a few hiccups, I got back to where I was originally. Tomorrow if everything goes according to plan, I will actually be able to finish the blender tutorial and on the weekend I will work on some things on my own that’s amazing and awesome etc. etc..

After two and a half days of work, my croissants are finally completed! I started my croissant dough on Tuesday night and finished them Thursday morning. Croissants take so long to prepare because they have to go through a process called lamination. This process insures layers within the croissant and a flaky exterior. Lamination includes folding butter into the croissant dough and chilling for hour long increments. I am very proud with how these turned out!

On Day 2 I completed 4 more sub-units of AP Microeconomics, I learned about market inefficiency and public vs private goods. I will likely finish Unit 6 and all of Micro tomorrow, then I will start on Macro Friday.

Today we visited a cow sanctuary and then we went to Akaka falls national park. I saw God through the time we spent with nature and just admiring his beautiful creation. Tonight we have plans to night snorkel so i’m looking forward to that!

On Wednesday, we decided to visit the 9/11 memorial. On September 11, 2001, 19 hijackers flew planes into the north and south tower (of the World Trade Center) and the Pentagon. Walking up to where the World Trade Center buildings used to be, there are massive water falls marking where the buildings used to be. Hundreds of names of the lives lost are written over the marble of the water falls. Inside the museum, they go through all of the events leading up to the attack and the aftermath. There are many artifacts showing the damage as well as videos that showed the towers falling. There is room inside that goes through thousands of people, explaining their job, life and the tragic way that they died during this attack. Pictures of the deceased cover the walls and an everlasting video plays showcasing their lives. They were all so young, barely passing by the age of 40 before dying to this attack. This was such a hard day because it was hard to view this tragedy. After visiting the memorial, we visited the “Chapel that Stands.” Saint Paul’s chapel is straight across from the World Trade Center, yet survived the attack. Many were evacuated to the church during the attack. We ended up lighting candles and praying over the lives lost in the attack and families. I saw God so much in this moment because it was a relief to come to Him after experiencing this tragic remembrance.

Today I shadowed in history and Bible classes again and was able to see a clear difference from 6th grade compared to 7th and up. I planned a lesson with the history teacher that we will co-teach on Friday. I also saw how you have to have clear guidelines that are enforced or the kids will not listen or pay attention. I observed different methods of giving notes and teaching.

On Day 3 I completed AP Microeconomics, I would like to start AP Macro tomorrow but I want to do quite a bit of Kahn academy practice problems so I will likely not get through a lot. On Day 3 I learned about inequality and reviewed what I had learned the past couple of days. I have currently written 35 pages of notes this week and would like to take a nap.

Day 1 was mostly spent traveling but I got to Mexico with enough time to watch the sunset on the beach. I saw God through the sunset and how beautiful it was and also through the oceans waves because it was so peaceful.

On day 2 I went on a boat to see the humpback whales. The whales migrate through Puerto Vallarta every year from January to March. While on the boat I was also able to see turtles and dolphins. I saw Gods creation when I saw the mom and baby whale sleeping because they looked so calm and peaceful.

On Thursday, we attempted to visit the Statue of Liberty, but when that didn’t work out, we went to Saint Patrick’s Cathedral. This church had extraordinary architecture and its stained glass windows and high ceilings made it all the more remarkable. We stayed a minute to pray and later, we visited Rockefeller Center. This plaza was amazing with the flags of the world surrounded by tall buildings and just amazing people. We ended the day with a walk around Times Square, which is crazy and fun all at the same time.

Today I visited a French bakery called Paulette bake shop. I was interested in this shop because of their French theme as that is what I bake the most of. They had various croissants, macarons, and eclairs. They were delicious and I was able to observe some of the chefs making eclairs!

On Day 4 I did practice problems the entire day, completing all practice problems in Kahn Academy's AP Micro course. This discovery week has thankfully allowed me to catch up on my AP schedule after exam week and I am glad I had the time to work.

Today I shadowed the Bible and History classes again. I helped lead one activity in 8th grade history. There was a speaker at lunch who is in the military and he talked about what it’s like training and talked about how it impacts college and life. I also helped the other history classes as they worked on projects.

Friday was the day my dad and I returned home but here are other things we did that I forgot to mention; we went to see Hamilton on Broadway. This was such an amazing experience to see the coordination and talent these actors had. The food in New York is amazing; I loved the tiny places that were somehow made fancy. We went to visit 9/11 as an extension of last year when I visited the George Bush Presidential Library in Dallas, Texas. Bush was the president during 9/11 and I learned a little about the attack last year. I remember wanting to go see the actual memorial and I am so thankful that my dad was able to make that happen. Times Square was always crazy and an amazing sight to see. Overall, I learned so much during this trip and had an amazing discovery week! :)

On day 4 I went to the Parish Of Our Lady Guadalupe. It is a Catholic Church in Puerto Vallarta, I was able to see the stained glass windows and the beautiful architecture. This Church had many rooms, such as a confession room. I saw God in many ways throughout this Church. I also noticed that the statues in this Church were covered up, I learned that this is because it is Lent. They cover up the statues to signify that something is different during this time and as a sign to prepare for the end of Lent.
