We see this with the man because he only remembers select events from his childhood, and from his time with his wife. These examples are of the good memories that he can not remember but something like shooting the man threatening his kid with the knife he will remember forever. This quote means that you remember things that are not the happiest or you forget the happy memories.

For the man, he probably wants to keep the memory of his wife alive while forgetting all the horrible experiences he’s gone through in this post-apocalyptic world. Traumatic events like witnessing his wife’s mental health decline, a truck full of bodies, and shooting a man dead. He writes “ the blackened shapes of rocks standing up out of the shoals of ash and billows of ash” with this he is saying that the landscape is basically empty.
