3-4 boneless chicken breasts

1 box chicken broth

1/2 - 3/4 can evaporated milk

1 can cream of chicken soup

1/2 stick butter

Bisquick

Milk

Salt & pepper

Stew chicken until cooked. Allow to cool and then shred into bite-sized portions. Set aside.

In large pot, add chicken broth, evaporated milk, cream of chicken soup and butter. Add salt and pepper to taste (ok...this is not a low sodium recipe...it takes a good amount of salt to set the taste). Allow broth mixture to come to low boil then add the cooked/shredded chicken.

As the broth/chicken mixture is returning back to a low boil, get a separate bowl and mix about 1-2 cups of bisquick with enough regular milk just enough to make a biscuit dough consistency (you don't want it to be too wet or tacky). Place the dough on a floured surface and knead once or twice. Roll out the dough to about 1/4 inch thick (you can do this by hand; don't necessarily need a rolling pin) then cut the dough into bite sized squares. Once the chicken and broth mixture has returned to a gentle-medium boil, drop the biscuit squares into the pot a few at a time. Do not stir the dumplings, but rather gently submerge the dumplings under the broth with a spoon. Apply lid to the pot and allow to simmer for about 15-20 minutes.
